I've been watching expedia, etc and one day it's $450, 30 minutes later, it's $650, then down to $325. I need tickets for October. I know the sooner I get them the cheaper they'll be but I can't buy till next week. Will the good prices be gone by then?

Also, if I buy the tickets then need to change the date, can I do it for a fee (how much)/ Can I have matches in my carry on?

Air fares are all subject to availability. Most airlines have a quota of seats at a certain price, once sold out the fare gets bumped up to the next higher available fare until the plane gets sold out. Usually the more flexible you are with dates/times the easier it is.

That all depends. It depends on if the specified fare in the fare class you want is taken or not. Fares usually get higher as the plane fills up with passengers.

If you are buying now for an october flight, then the fares may drop down a bit. You have to realize that October is not a busy flying month. The holiday season doesn't start until a week before Thanksgiving. So you may actually get a good sale fare. But dont' sit on it and wait. You can never predict when the fares will drop.

Only the airline agent can pull up all the fare classes for the date you want and let you know how expensive a flight will run you.

Airline prices fluctuate constantly. Hundreds of factors are to blame such as changes in fuel prices and number of people traveling on a certain day. It all get passed on to you and you really never know. Its just a fact of life.

You are usually going to get charged for ticket changes if they will let you change them at all. Usually around $100. If you are flying business class or first class there are no charges.
They won't let you fly with matches or a lighter. No smoking on the plane. Why would you need them.

supply and demand, when more people want to fly they cost more while when less people want to fly so they are cheaper, better to sell them cheap than flying with empty seats

the price in oil fluctuates is one reason and the other is that airplane companies are trying to rip you off.
