I always bake Salmon at 375 degrees, for 20 to 25 min. I like my fish to be very moist and not dry.

Can't help you on gas-mark equivalents [cook Yanqui rather than Brit!] but here's how I bake those salmon filets....once you've established the gas-mark that is the same as 375 degrees Fahrenheit: place thawed filets on baking dish sprayed with no-stick stuff like Pam or similar put smears or dabs of margarine on each filet sprinkle parsley flakes, seasoned salt & lemon pepper seasoning on filets bake for approx. 10-12 minutes - test with fork, salmon should flake [shear] easily. Note: do NOT cover or wrap salmon filets - this produces steam and a boiled effect rather than baked. Salmon is an ocean-oily type of finny friend and can stand open baking without drying. Serve with boiled baby potatoes in a cream sauce/bechamel - or a rice pilaff - or plain mashed?

First.... please do not gage your cooking on how thick something is. When cooking the best investment you can ever make is a $7 thermometer or go all out an buy a $25 digital probe one. 350 is a normal temperature to cook in a oven. Allow the fish to cook and reach an internal temp of 125-130, allow the fish to rest for a few minutes, this will allow th fish to finish cooking. Good luck and remember do cook buy thickness. Cook by Temperature.

Around 350-400.....but it all depends how cooked you want it. 5 minutes for every 1/2 inch thick!!! That is always a nice rule of thumb!
