It is in the Eucharist that we receive the grace to participate in the one sacrifice of our Lord for all. We are present at the cross along with not only our congregation but all of the Church Triumphant.

When Christ said to do this in "anamnesis" of me it was the promise of a miracle that will last for all time making the past present for all the faithful that have the grace to believe and as St. Paul said to discern the Body and the Blood of our Lord lest we receive the Eucharist and bring condemnation on ourselves.

In Protestant tradition it is just a recalling from Scripture what Christ has done for mankind. For Catholics, by the miracle of our Lord as He promised, we are there with St. Mary and St. John at the foot of the cross.

Bread and Wine turn into Host and Blood at the altar during Mass. Jesus shared both of these with the Disciples and said "Do this in memory of Me"

Because bread is the ultimate food staple and Jesus is the Bread of Life. He desires to be with us here on earth but chose a humble state -- a piece of bread so we are not intimidated by his glory.

That's just an idea some Roman Catholic Theologian came up with many hundreds of years ago.
