There are many conditions as well as diseases that may affect the sense of taste.

Some of the diseases are:
cirrhosis
Sjögren syndrome
lichen planus
erythema multiforme
aglycogeusia
geographic tongue
renal failure with uremia and dialysis

Other causes can be:
CNS damage (ex. facial paralysis)
heredity
endocrine disorders
hormonal changes
nutritional deficiencies
dentures
surgical manipulation
oral or mucus disorders
lesions

Also, anything that affects your sense of smell, will also affect your sense of taste. Smell plays an important part in our sense of taste.
