They're just regular Idaho potatoes and they're kind of green...not like, rotten or gross green, but like they're not quite ripe I guess. They look like any other potato inside, but I just want to be sure it's okay to cook and eat the potato when it isn't "ripe".

Also, I didn't ask if "ripen" was the correct term...notice I put it in quotes in the first place? I didn't think they actually ripen either, I just couldn't think of another way of explaining it. P.S. you smart as_s people who gave me the "potatoes don't ripen" answers defintiely aren't getting best answer.

Yes you can cook and eat them. However they will be hard to peel, take longer to cook and they will not have the same taste. (a little more bland tasting)

Just cut the green part away. If the entire potato is covered in green, then dispose of it. It won't taste good and could give you a tummy ache. The green is caused by sunlight and will give a bitter taste. When I was a kid, we kept our potatoes in the barn so they would not get " ripe". My dad covered them with straw during the cold winter months.

I depends on how green they are. I've read, like the other's have said, that green potatoes contain a toxin that can make you sick, so I try to avoid eating green 'taters. If it's not that bad, you can always cut the green away and use the rest of the potato.

I don't see why not. I find green potato chips all the time and I eat them anyway. There's an urban legend that they're toxic though (I saw an Arthur episode about it when I was a kid lol...think it was called "Don't Eat The Green Ones" if you're curious enough to youtube it).

Don't eat green potatoes. My dad is a potato farmer, he's also a man who will eat just about anything, but the one thing he will not eat is green potatoes. Apparently they have very high levels of carcinogens and the green colour means that they high developed high levels of toxins that can make you ill.

Potatoes don't 'ripen'. They are tubers, not fruit. The green pigmentation is solanine, induced by exposure to light. In small amounts, solanine just makes them taste bitter. Large amounts are toxic. Throw 'em away. Potatoes are cheap anyway.
If the green color is limited to the surface, cut it away and use the rest of the potato.

Yes it is fine...it is like a bananna,if the outside is green and the inside is fine,you can still eat it! just make sure you boild the potatoes first before you do anything!

They are fine. Potatos turn green if they are exposed to sunlight while they are growing. It is not a problem.

they are fine theyre jus lik bananas so yes you can eat them but they will b hard 2 peel they only turn green if theyve been exposed 2 much sunlight or water it depends on what kind it looks lik

You can bake them as usual, just cut around the green part as it will taste bitter, but otherwise they are ok
