I would make a pasta primavera dish using whole grain pasta (like rotini) with fresh veggies(tomatoes, zucchini, onions) and herbs (basil and garlic) and add grilled chicken strips(marinate them first in lemon olive oil)....www.recipezaar is my fave site to get recipes of ALL kinds! Start there!! Quick easy delicious!! LOW FAT!
Parmesan or asiago grated fresh and on the side!!

Edited to add - Sorry...I misunderstood the question and listed a hot chicken pasta dish instead of a chicken pasta salad. I'll leave it in case you ever want a warm low-fat dish.
I make this type of sauce all the time. I vary it by adding leftover salmon with asparagus instead of the chicken. This is just a general idea. Leave out something you don't like it.
Chicken and Pasta Cream Sauce
Saute some garlic and some finely chopped onion in a little bit of olive oil. Add some mushrooms and brown them. Add a bit of diced tomato or sun-dried tomato.
Add chicken stock and fat-free half and half to make the amount of sauce you want - start with about 3/4 cup of each.
Add a pinch of crushed red pepper. Cook until it thickens a bit. Add a bit of cornstarch if necessary.
Add some diced, cooked chicken.
Taste and season with salt and pepper.
Serve over pasta.
Grate Parmesan or Pecorino Romano on top. These are good cheeses to use because a little goes a long way in flavor.

I don't have an exact recipe but what i like to do is use skinless and boneless chicken breast or thighs (i usually boil then bake them in a sauce like heinz sweet and smokey bbq sauce), but you can just bake them or grill them with a glaze like honey garlic and then chop them up in chunks or strips, use a rotini pasta (the whole wheat kind is really healthy), and a low cal dressing that you like, add some cherry tomatoes (halved or whole), any herbs you like (that will compliment the flavors), and you can also use some sweet peppers if you like them (red, yellow and orange can put a nice color to the pasta). as for the taco salad dish...I'm not really sure that you can make a salad with tacos, but then i've never made one or seen one before. with taco shells you can use lean ground beef or pork, low fat salsa, low fat cheese like cheddar (there is some made low fat) the marble variety is nice looking, some fat free sour cream and it should taste good and be healthy too. hope this helps

swiss and dry parmasean have less fat then mozerella. If you go with the taco salad choose ground turkey or very very lean beef for the meat part. Go easy on the cheese. Use more salsa then sour cream and go with light sour cream. Use a tortilia instead of a shell...Shells are deep fried to keep hard. Chicken...cut the fat off before cooking...grill it so the fat runs off if there is any. whole wheat pasta instead of the processed pasta. use an olive oil base sauce or tomato base instead of any white creamy sauce. sprinkle with parmasean cheese. grill the chicken with a little salt and pepper. use wheat or tri color pasta.( they're really very good) load it with vegies. broccoli,cucumbers,onion,celery,peppers, any kind you like and use a low fat italian dressing. good seasons is a good one. you make it yourself using any good olive oil. get a loaf of french bread and you've got a great, low fat healthy meal.
EDIT- oops. forgot the cheese. use mozzarella or low fat cheddar
