MMMMM----- Recipe via Meal-Master (tm) v8.04 Title: Crispy Chicken Tenders Categories: Polkadot, Lisa, Chicken Yield: 2 Servings 1 c All-purpose flour 1 ts Poultry seasoning 2/3 ts Paprika 1 ts Onion powder 1/2 ts Garlic powder 1/4 ts Salt ds Pepper 1 Egg 1 ts Milk 3/4 lb Chicken tenders Cooking oil Combine dry ingredients in a plastic bag. In a bowl, lightly beat eggs and milk. Dip chicken pieces in egg mixture and shake off excess. Shake a few chicken pieces in the bag at a time, coating well. In a large skillet, heat 1/4 in. of oil over high heat; brown chicken on all sides. Reduce heat to medium and continue cooking for 10 minutes.

GRANDPARENT DAY COOKIE
1 1/2 c. brown sugar
1 1/2 c. white sugar
1 1/2 c. butter
1 1/2 c. oil
1 egg
3 3/4 c. flour
1/3 tsp. salt
1 1/2 tsp. soda
2 tsp. vanilla
1 1/2 c. oatmeal
1 1/2 c. crushed cornflakes
Mix butter and sugars. Add oil, vanilla and eggs. Sift in flour, salt and soda. Add oatmeal and cornflakes. Drop by spoon onto ungreased sheet. Bake at 350 degrees for 6-8 minutes. Makes a big batch.
GRANDPA'S CRAB DIP
1 package cream cheese (8 oz)
1 small tub sour cream
1 package imitation crab chunks (8 oz)
1 tablespoon soy sauce
5 green onion tops, chopped
1 tsp flavor enhancer powder (optional)
In a large bowl, mix all ingredients. Chill 2 hours in the refrigerator and serve with crackers.
Editor's Note: Try adding a teaspoon of Crab Soup Base and a pinch of onion and garlic powder. Sprinkle top with paprika and choppped parsley before serving. Submitted by: Lori Woods

CHICKEN TETRAZZINI
1 lb. pasta, cooked
1/2 pound fresh mushrooms
1 stick butter
2/3 cup flour
1 large onion, sliced
5 cloves garlic, peeled and chopped
4 c. chicken broth
2 c. light cream
1/4 cup dry sherry
4 c. diced chicken, cooked
1 c. grated Parmesan cheese
1/3 teaspoon garlic powder
Salt and pepper to taste
Cook and drain pasta according to package directions. Slice the mushrooms 1/8 of an inch thick and sauté in 2-3 tablespoons of the butter, along with sliced onion, and chopped garlic until lightly browned. Combine the remaining butter with flour and add chicken broth, stirring over low heat until thickened. Add the cream, salt, pepper, sherry, and garlic powder.
Divide the sauce in half. And one half of the chicken meat, and half of the mushrooms and cooked pasta. Butter a casserole dish and turn the pasta mixture into the casserole leaving a well in the center of the pasta.
Turn remaining cooked chicken half into the center of the pasta mixture. Top with Parmesan cheese, and bake uncovered at 400 degrees Fahrenheit for 20 minutes.
Optional: may also top with butter to breadcrumbs and grated cheddar or American cheese.

East skillet pork chops
4-6 center cut pork chops
1 can reduced fat mushroom soup
1/2 can milk
1/2 sliced onion
4 T flour
1/3 C. olive oil
1) Sprinkle flour over both sides of pork chops. Heat oil and brown in a skillet in olive oil.
2) drain olive oil
3) combine milk and soup
4) layer sliced onion over chops , then pour soup/milk mixture over chops. Season with pepper; no more salt is needed.
5) cover and simmer on stove for about 45 minutes. Check and stir a couple of times.
This makes a gravy that is good over rice or boiled new potatoes.

Almost any veggies can be easy. Meatloaf can be easy-
I do not measure but I put ketchup, mustard, steak sauce, spices (salt, pepper etc.) onions, green peppers, cracker crumbs, 1 egg. Mix then top with ketchup and cook at 375 for about 30 minutes or till done.
Easy cherry Yummy: Take 1 can cherry (or any other) canned pie filling- pour in pan then take 1 box of white cake mix and pour the dry mix (straight from the box) over the cherry pie filling. Take 1 stick of butter and spread over the cake. (Take little peices and spread them out on top) then bake at 350 until browned. This is good. It makes a crisp crust on top of the cherries. Use butter --not margerine though.
Roast Beef: Use 1 pack dry onion soup mix, some carrots, potatoes, celery if you like-- put the meat in the crock pot with the soup mix and water- cook for about 5 hours -add all veggies. Cook till tender (This can also be done in the stove in less time -just put it all together and wrap in foil andd cook till done at about 375)
Sweet and Sour Chicken: 1 pack dry onion soup mix and 1 can apricot preserves. Mix together and heat. Cook chicken and coat in mixture. Serve with rice and veggies.
Beans: Soak dry beans in water overnight in fridge. Put in pot or crock pot and cook till tender... good with cornbread (easiest and best like my mom makes it) Self rising cornmeal- and buttermilk. Mix until the consistency of thined oatmeal. Preheat pan with oil. Pour batter in and bake at 400 till brown and firm. This makes a crispy crust especially if in a cast iron skillet.

with the grandparents you got to watch the spices
get the all ready cook'd whole roasted chicken
1 bag stove top dressing --make acording to directions i always add more poutry seasing and sage
get cranberry sauce put in frege to get cool ---it's soft not lot of spice
pea's or a vegatable you know they like
tea or coffie and a pound cake ---pound cakes are not spicy

grandparents love stews and casseroles - well not all grandparents but some. they like the vegies well cooked and the meet and no spices.
Crumbed hicken with vegetables and gravey is simple and so is meat loaf - well done and good on you for wanting to help cook for them .
