nothing beats a sandwich for a quick lunch. any kind will do (as long as it doesn't come in a paper bag with french fries!). ..but my favorite has to be:
baguette
goat cheese
spinach
fresh plum tomatoes, sliced
caramelized onions
fresh cracked black pepper
olive oil
ugh. the only injustice is that we're not allowed to have a glass of wine with lunch here in the states! (not if you work, anyhow!)

My favorite lunch dish would have to be a Reuben sandwich with either corned beef or pastrami, swiss cheese, sauerkraut, & thousand island dressing on toasted rye bread. Must have a pickle on the side!

I get boneless skinless chicken breasts frozen, throw one of those on the George Foreman, put 1/2 cup rice, 1/2 cup water in a bowl in the microwave and usually have a salad made with bagged italian lettuce, and the newest thing is the wishbone spritzers. (i love the balsamic vinegrette) by the time i put the rice in the microwave and get my salad ready the chicken breast is done (around 10 minutes) its a quick healthy meal!

Vegetable and fruit salad, with nuts wheat crackers, large ice tea.
Salad with, with chicken strips on it. Mountain Due.
Cream tomato soup, grilled cheese sandwich. Fruit bowl, Milk.
Fish , Slaw Hush Puppies, Coffee.
Potato salad ,baked beans, home made biscuit, milk
Home fried chicken, White gravy, home made biscuits, Coffee.

I like to replace my lunch with something more often eaten at dinner such as beef or Pasta. My Metabolic rate is higher during the mid-day and it gives me time to digest. I will then eat a lighter supper.
Also save your beverages for later - after lunch or dinner or with light snacks. Don't drink with a large meal. It waters down the stomachs digestive juices. :o)

Chicken breast stuffed different cheeses, with green beans. I'd add mashed potato's but I'm diabetic so the whole wheat bread will have to be it.
