Last Sunday.... 5 days ago!
You should cook it today... tomorrow at the latest, even if you don't plan to eat it immediately. At least, the cooking process stops the raw chicken from aging any further.
Generally a whole chicken takes a day to two to defrost... afterwards, you're good for another 3 or 4 days... so in total 6 or 7 days max.
Give it the sniff test. If your fowl is foul, then toss it.

If the chicken was defrosted at room temp or in water, cook it the same day. If defrosted in the fridge, then a max of 3 days, if:
The 3 day limit is based on the quality of your fridge. If it is working properly and keeping the box at a temp of 42º - 45º then a max of 3 days. If the box is warmer, 45º - 52º, then a max of 1 day after the chicken is defrosted(if defrosted in the fridge). Any warmer temp, nothing is safe in your fridge.
Some fridges have a Meat drawer. In most cases the cooling air in this drawer is taken from the main fridge box and is the same temp as the box. Some of these Meat drawers have a vent from the Freezer to keep the Meat drawer at colder temps, generally 34º - 38º. Some mfgrs. and people say Meat drawers like this will keep meat up to 5 days. Do that at your own risk. My fridge has one of these meat drawers and if I defrost the meat in this drawer, then a total of 5 days is the max.

How long will chicken last defrosted in the fridge?
I've had the chicken in the fridge since Sunday. Is it safe to cook and eat?

Smell it. If you think it smells funny throw it out. If it smells like regular raw chicken does. Then try to use it no later than today. Next time don't let it pass more than 2 to 3 days defrosted. As it is your risking it being bad now.

So long as your refrigerator temperature has not crept up around 40 degrees (where bacteria can start to grow) raw chicken can keep for about 5 days. You're pushing it, but if you're sure about the temperature of your chillbox then you should be ok to cook.

Generally I try not to go more than 4 days at home or 3 days in the restaurant. Sunday was 5 days ago so its getting there. As long as it still looks and feels firm, has good color, and doesn't smell foul it should be fine.
