Oh I love turnips! I hope you like these!!

AMISH TURNIPS

2 c. cooked turnips
2/3 c. bread crumbs
1 tbsp. butter
2 tbsp. brown sugar
1 c. milk
1 egg
Salt and pepper

Cook turnips until tender. Drain, mash and then add 1/2 cup bread crumbs, saving rest for top. Add egg, sugar, milk, salt and pepper to taste. Mix together; pour into greased baking dish. Dot with butter and rest of crumbs. Bake 45 minutes at 375 degrees.

BAKED TURNIP CASSEROLE

1/2 lb. chopped bacon
12 turnips
2 onions, chopped
1 clove garlic, finely chopped
1 bell pepper, chopped
1/2 can pet milk (sm.)
2 egg yolks
3 slices bread, toasted & crumbled
1/2 stick butter
2 tsp. onion tops, finely chopped
2 tsp. parsley, finely chopped
Salt & pepper to taste

Pare and boil turnips. Drain and mash. Saute chopped bacon in heavy pot. When lightly browned, add onions, bell pepper and garlic. Cook over low heat until tender. Then add turnips and cook mixture approximately 1/2 hour.
Beat egg yolks and mix with Pet milk and bread crumbs and add to mixture. Add onion tops, parsley, salt and pepper to taste. Pour into casserole and sprinkle with minced bacon. Bake at 350 degrees for 1/2 hour.

Here in So. New England we grow the best turnips in the country. They're called Macumber turnips. All these recipes sound so good but, they aren't in season till fall Guess I'll have to wait. It seems the most important part of a good dish is the prep. , you must peel off about 1/4 in. of the skin. This in where the stringy part is. Love them boiled with lots of butter & S&P. Yum.

Tugboat Turnips

2 large rutabagas, or turnips
6 large carrots
1/2 cup butter
1/2 cup light brown sugar
1 teaspoon salt

Peel and chop the rutabagas and carrots. Place in a medium size saucepan, cover with water, and bring to a boil. Gently cook until tender. Drain the rutabagas and carrots, add the butter and brown sugar. Mash with a potato masher. Adjust the taste with salt and sugar.

Maggie Mahoney's Turnips

15 pounds yellow turnips (rutabagas), peeled and cut into small pieces
3 large yellow onions, diced
1/2 pound butter (divided)
1 1/2 pounds bacon, chopped
1/2 cup table cream
3/4 cup maple syrup
1 teaspoon salt
1 teaspoon freshly ground pepper
2 cloves garlic, crushed
1 tablespoon sugar
4 strips bacon per baking dish

Place turnips into large stockpot with water, bring to a boil. Add sugar. Cook until tender. While turnips are cooking, saute onions in 3 tablespoons butter until translucent. Cook bacon in a saucepan until crisp, drain. Using a ricer, rice all the turnips into another pot. Add onions, bacon, the rest of the butter, cream, maple syrup, garlic, salt and pepper and stir just like mashed potatoes. Put in baking dish and then put 4 strips of bacon across top of dish. Bake for 1 hour at 300 degrees. Guide: When bacon on top is done, ready to serve. Can be frozen in dish for up to 3 months.

I love Turnips, my favorite way to make them is to dice them up, and cook in a saute pan with chicken stock until liquid has reduced and turnips are fork tender, then add in some maple syrupOr brown sugar with some butter, salt and pepper... YUM!

Grandma used to cut them in half and boil them with cabbage. It was her treatment for colds too. It's got a strong flavor that takes getting used too.

AMISH TURNIP

1 c. cooked mashed turnip
1 c. bread crumbs
1 tbsp. sugar
Salt to taste
1 egg, beaten
1 c. milk
1 tbsp. butter

Mix all the ingredients with half of the bread crumbs. Place in greased casserole. Cover with the rest of the crumbs and bake 45 minutes at 350 degrees. Turnip haters like this dish.



BACKBONE WITH TURNIPS

2 lb. pork backbone
1 1/2 qt. diced turnips
2 c. water
2 tbsp. flour (plain)
1 c. chopped onions
2 cloves garlic
3 tbsp. oil
Salt, black pepper & cayenne pepper to taste

Brown flour in oil in heavy pot. Add backbone seasoned with salt and pepper. Add onion and garlic. Cover and cook very slow until meat is tender. Add turnips and water, simmer until done. Serve with rice or hot cornbread.

CARROT OR TURNIP SOUP

2 tbsp. chopped onion
2 tbsp. butter
2 tbsp. flour
1 qt. hot milk
1 c. grated raw carrots or turnips
Salt and pepper to taste

Saute onion in butter for a few minutes. Blend in flour; add milk gradually, carrots or turnips, salt and pepper. Cook stirring frequently, until carrots or turnips are tender, about 10 minutes. Serves 4.

DIJON TURNIPS

1 bag turnips, peeled and cleaned
1/4 c. softened butter
1 tsp. Dijon mustard
Black pepper to taste

Preheat oven to 350 degrees. Peel and slice turnips in half. Mix mustard and butter, spread on turnips. Place turnips in shallow baking dish and sprinkle with black pepper. Bake until tender.

MASHED TURNIPS

Water
2 1/2 lbs. turnips, peeled and diced
1/4 c. butter
2 1/2 tsp. salt
1 tsp. sugar
1/4 tsp. pepper
Parsley for garnish

Heat turnips to boiling in water. Reduce heat to low; cover and simmer 15 minutes or until tender. Remove from heat and drain. Mash; add butter, salt, sugar, pepper. Stir until well mixed. Serve garnished with parsley.

SCALLOPED TURNIPS

Turnips
Green pepper, chopped
Onion, chopped
Grated Parmesan cheese
Medium white sauce

Wash, scrub and drain white turnips. Pare. Cut into quarters or slices. Cook in small amount of salted boiling water until just barely tender. Do not overcook. Slice hot turnips into buttered baking dish or casserole. Cover with medium white sauce. Sprinkle with chopped green pepper and chopped onion. Add 2 to 3 tablespoons grated cheese. Cover. Bake in 375 degree oven only until cheese melts. Uncover. Bake 5 minutes longer. Allow 1 to 2 medium-sized turnips per serving.

(me)SHARON'S TURNIP CASSEROLE

3 1/2 c. turnips (pared and sliced)
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
Dash of pepper
1 1/2 c. milk
2/3 c. shredded cheddar cheese

Cook turnips in boiling salted water until tender. Drain thoroughly, melt butter in saucepan and add flour, salt and pepper. Add milk and cook, stirring constantly until the mixture thickens. Combine sauce and turnips, pour into a casserole. Top with cheese and bake in 350 degree oven until hot and bubbly. Serves 6

TURNIP PUFF

3 c. mashed yellow turnip
2 eggs, separated
1 tbsp. sugar
1 tsp. salt
1/8 tsp. pepper
1 tbsp. butter

Beat egg yolks slightly, combine with turnip, sugar, seasonings and butter. Mix well. Fold in stiffly beaten egg whites. Pour into a 1 quart greased casserole and bake at 375 degrees for 40 minutes or until firm and slightly brown.
