SPINACH DIP

1 pkg. frozen spinach, thawed & drained
1 pkg. frozen artichokes, chopped
1 sm. can green chilis
1 c. mayonnaise
1/3 cup Parmesan cheese, grated
1 cup Monterey Jack cheese, coarsely grated
2 cloves garlic, minced

Thaw and squeeze excess moisture from spinach using a clean kitchen cloth, cheesecloth, or strainer. Combine all ingredients, reserving 1/4 c. of Monterey Jack Cheese.
Portion spinach mixture into individual bakng dishes or ramekins. Sprinkle reserved 1/4 c. Monterey Jack over tops of each serving.

Bake in preheated 350 degree oven until top is bubbly.

Great served with tortilla chips or vegetable sticks.

Variation: Substitute mozzarella or Muenster cheese for the Monterey Jack.

Spinach Bread Dip Recipe Courtesy of Cathy Lowe





1 package Knorr vegetable soup mix
16 ounces sour cream
1 box frozen spinach, thawed
2 loaves round peasant bread

In a large bowl combine soup mix and sour cream. Strain excess water from spinach and add to dip mixture. Stir to combine. Cover with plastic wrap and chill for 2 hours. Slice a circle around top of bread and remove inside and cut into bite sized pieces. Fill hole with spinach dip. Cut other bread loaf into cubes and serve with dip.

1 large clove garlic
1/2 cup chopped scallions (white portion only)
1 (10-ounce) package frozen chopped spinach, thawed and drained well
1 cup sour cream
1/2 to 1 cup mayonnaise
1 teaspoon chopped fresh thyme leaves or 1/2 teaspoon dried thyme leaves
1 teaspoon Worcestershire sauce
1 dash hot pepper sauce or more to taste
1/2 teaspoon salt
1/4 teaspoon freshly ground white pepper
1 round loaf crusty bread (country white, pumpernickel, etc.)
Paprika

In a blender or food processor, finely mince the garlic and scallions. Add the remaining ingredients, except the bread and paprika and blend until smooth. Taste and adjust the seasonings. Refrigerate for up to 2 days. Just before serving, make a bread bowl: Cut about an inch off the top of the round of bread and save it for a lid. Remove the bread from the center, hollowing out the loaf. Stir the dip well and place in the bread bowl. Sprinkle lightly with paprika. Serve the removed bread chunks along with crudites for dipping.

This one worked good for me.

1 can drained artichokes (optinal)
1pkg. Frozen chopped spinach
1/2 c Sour Cream
1/2 c mayonnaise
3 oz. cream cheese
1/3 c shredded Mozzarella
1/4 c Fresh Parmesan Cheese
1/2 to 1 tsp. Garlic salt

Cook spinach according to the directions on the package and drain. Drain Artichokes and chop them. Mix the Artichokes and the spinach with the remaining ingredients. Put in greased 1 quart dish and bake at 325 degrees for 20-30 minutes.

Luscious Spinach Artichoke Dip
INGREDIENTS

* 1 (14 ounce) can artichoke hearts, drained and chopped
* 1/2 (10 ounce) package frozen chopped spinach, thawed
* 1/2 cup sour cream
* 1/4 cup mayonnaise
* 1/4 cup cream cheese
* 1/4 cup grated Romano cheese
* 1/4 teaspoon minced garlic

DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C).
2. In a small baking dish, mix together artichoke hearts, spinach, sour cream, mayonnaise, cream cheese, Romano cheese, and garlic. Cover dish.
3. Bake until heated through and bubbly, about 25 minutes.

EASY SPINACH DIP
This dip is great for a potluck dinner. It is fun served in a scooped out sourdough round.

INGREDIENTS

1 container (8 ounces) sour cream

Crackers for dipping
Thaw spinach and squeeze and drain thoroughly to eliminate excess water. Mix mayonnaise, sour cream, soup mix, and drained spinach. Refrigerate overnight. Serve with crackers.

I like Nickie G's answer, but instead of Knorr, I use Hidden Valley Ranch powder. And chop up a little can of water chestnuts. It was a big hit at our last dinner party.
