In Maui, rent a car, get up early, and drive the road to Hana. Bring a good guidebook so you know all the cool places to stop. Like the Red Beach and the Black Beach and the waterfalls (seven sisters?) Don't be afraid to drive the south side of the island where the rental cars companies say not to-the roads are safe but drive slow 'cause you might hit a cow and that's why they tell you they won't cover your accident.
The sunrise bike tour of Haleakala is unforgettable. The sunrise is spectacular and the bike ride is easy and fun. You gotta get up at 3:30am or so for the hotel pick up so if you're coming from the US do it the first day, 'cause you won't be able to sleep anyway due to the time change.

Snorkel trip to Molokini (sp?), take surfing lessons, wind surfing, sailing, deep sea fishing....get the drift here - all the fun stuff is in that wicked blue water.

On Maui - go to Lahina or the top of Haleakala. You can take bike ride down Haleakala, which must be pretty wild.

On the big Island (Hawaii) go to the volcano park on the east side of the island. It is way more fascinating than you can imagine. My teenage daughters were very enchanted by the volcano park. They wanted to hike out to the active lava flow, which you're allowed to do.

In Maui, there's good snorkeling, SCUBA diving (or SNUBA, which seems to be the favored method for un-certified people; i.e. "resort dives" these days). SCUBA and snorkeling can be done from shore or via boat, but SNUBA is, AFAIK, only done from boats, since it's done under the direction of a divemaster.

We also did the bicycle ride (mostly coasting) down Haleakala. The outfit we used offered both guided and un-guided rides. There's not much "guiding" other than to control your speed, so halfway through, my son and I asked to be cut loose to do an "unguided" tour. That allowed us to go about 50% faster, making it a lot more exciting.
