Usually just ground beef but occasionally mix in some ground sausage with it, egg, garlic salt and pepper, seasoned bread crumbs, Worcestershire sauce, ketchup, mix it up, put in a loaf pan, make an indentation down the middle and bake, I add a bit of ketchup and brown sugar to the top the last part of baking. Can also add cheese at that point.
Italian Meatloaf
A spin would be an Italian meatloaf. Use pizza sauce instead of ketchup, spread the raw meat mixture into a flat rectangle and add more pizza sauce and some shredded mozzarella cheese in the middle, roll that up and place in loaf pan. Add pizza sauce and cheese to the top the last part of baking. Use Italian seasonings when mixing the meat up and I leave the Worchestire sauce out of this one and sometime don't use the egg either so the meat is a bit firmer.
BBQ
You can also use your favorite BBQ sauce in place of the ketchup and have BBQ version.

This is the BEST meatloaf recipe and definately different, my husband absolutely loves it, i just put in onion powder instead of chopped onions, i also bake it in a round glass pie pan, it cooks better, delicious, please try it!
INGREDIENTS
1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
Bake in preheated oven for 1 hour or until juices are clear.

Glazed Meatloaf I
INGREDIENTS
* 1/2 cup ketchup
* 1/3 cup brown sugar
* 1/4 cup lemon juice, divided
* 1 teaspoon mustard powder
* 2 pounds ground beef
* 3 slices bread, broken up into small pieces
* 1/4 cup chopped onion
* 1 egg, beaten
* 1 teaspoon beef bouillon granules
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a small bowl, combine the ketchup, brown sugar, 1 tablespoon lemon juice and mustard powder.
3. In a separate large bowl, combine the ground beef, bread, onion, egg, bouillon, remaining lemon juice and 1/3 of the ketchup mixture from the small bowl. Mix this well and place in a 5x9 inch loaf pan.
4. Bake at 350 degrees F (175 degrees C) for 1 hour, drain any excess fat, coat with remaining ketchup mixture and bake for 10 more minutes.

I use 11/2 lb. ground turkey, 1 lb.ground pork, 1/2 cup seasoned Italian bread crumbs, 2 eggs, 1/8 tsp each of pork and turkey seasoning, 1 medium size ground carrot, 1/4 cup diced celery, 1/2 cup diced onion, 1/8 cup chopped parsley and add 16 ounces of tomato sauce. Mix well. Makes about 21/2 pounds.
Use a non stick cooking spray on baking pan.
Place on center rack with the thermostat set to 350 degrees.
Bake approximately one hour and twenty minutes.
For a moist loaf place a foil tent over the loaf and remove the last 15 minutes of baking time.
You can always substitute the meat with canned salmon.
(2 large cans) Remove the bones and skin and mash well.

I just use my imagination most of the time, but it is usually similar to the way you make yours. Sometimes I use oatmeal or crackers instead of bread crumbs. I almost always use tomato sauce instead of ketchup and for the topping I use just a little tomato sauce that I have reserved, mixed with brown sugar, honey, or syrup (whatever I have on hand).
I've added a little cubed cheddar or Colby cheese for a little variety. Once in a while I slice a nice ripe tomato and put thin slices on top when I add the topping during the last 15 minutes of baking.

This recipe has become a favorite, courtesy of Kraft Foods.......there are NO breadcrumbs, crackers, or other fillers like that, you use Stove Top Stuffing instead to act as the breadcrumbs.......enjoy......
1/2 cup finely chopped onion
1/4 cup KRAFT Light Zesty Italian Reduced Fat Dressing
2 lb. extra lean ground beef
3/4 cup ketchup, divided
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs
1/2 cup shredded Sharp Cheddar Cheese
PREHEAT oven to 375°F. Cook onions in dressing in large nonstick skillet on medium heat 8 to 10 min. or until golden brown, stirring frequently. Remove from heat; cool slightly.
COMBINE meat, 1/4 cup of the ketchup, the stuffing mix, water, egg whites and onions; mix well. Place meat mixture in 13x9-inch baking dish; shape into 10x5-inch oval loaf. Spread with remaining 1/2 cup ketchup.
BAKE 55 min. to 1 hour or until cooked through (160°F). Sprinkle with cheese; bake 2 min. or until cheese is melted

My best meatloaf…..I use the same ground beef, onions, peppers, seasoned bread crumbs, and egg… no ketchup in side of the meat….plus I add fresh chopped garlic, grated Parmesan cheese, milk, crushed red pepper flakes. I top the meat loaf with roasted red peppers, and then a little ketchup. I do not cook mine for as long as you do, I use a meat thermometer and cook it to a medium or medium rare temperature.

I use about the same recipe, but sometimes add mushrooms, finely chop them in a processor. They're a little watery usually so you'll have to add a bit more bread crumbs. Also try mixing it up and making a poultry or pork loaf; the internet is full of recipes for those kinds of loaves.

lb ground beef 1/2 lb ground sausage bread crumbs or crackers broken up ritz crackers are great, (after a Little milk for moisture)season salt, touch of thyme, oregano,garlic salt. white pepper 2 eggs sometimes chopped onions and fresh garlic. after baking brush it with ketchup or bbq sauce. depends on your taste..
