I am a senior and I have been on more than a dozen cruises with several cruise lines including Royal Caribbean, Norwegian, Princess and Celebrity. All four of these cruise lines have pretty much the same format for entertainment and activities. They just have activities, not activities JUST FOR seniors. You can choose what you want to participate in. There will of course be activities and games around the pools. Sometimes they have special activities but you are mostly left to just use the many facilities on ship like the library, game room, internet cafe, casino, and/or the lounges and bars. There are always shows every evening presented so that no matter what time you have dinner you can see a show. The most fun activities you do on a cruise are the tours when you stop at ports.
One cruise line, which I have not been on Holland America, has a reputation of having mostly seniors as passengers, I mean like people 50 to 60 and over. Now they may have some events that are mostly for older people, but they also have the same ship's features, i.e. library, show room, casino, as all other cruise lines. So I don't think you would necessarily get anything that different from other cruise lines.
I have noticed that most of the passengers on the Princess and Celebrity ships are more senior. And there were fewer kids. If you just want to be around seniors then Holland America may be best, but you will also enjoy Princess, Celebrity and even Royal Caribbean. The latter is my personal favorite.
One thing that I suggest is that you go to the web sites for the cruise lines and look at the information about activities on board.
Although I have been on many NCL ships I do not like them as much as the others that I have mentioned because of their "freestyle" cruising. Its different from the other lines in one respect. All of the other cruise lines allow you to select a dinner time and then they assign you a table. You get to know your waiters and they you. In my opinion this is a more elegant and service oriented experience on a cruise over just walking into the dining room and having them give you a vacant seat, like going to any restaurant anywhere. On the other lines you get the same table every night, get to know not only your waiters but the people who are at your table.
Also, NCL has a bunch of what they call "alternative dining" places for dinner. They are nice, but they charge a gratuity/service charge/fee for each time you go, for each person. I neve use them myself.

You might want to check out www.cruisecritic.com. This website has detailed information and reviews on each cruise line and each cruise ship.
Depending on what you want, where you want to go, how much you can afford, there are different cruiselines, ships, and itineraries that you can pick.
I'm not sure at what age you consider "senior", but you can start by looking at the cruise lines that perhaps are not as "party oriented" but have the activities you might find interesting.
I'm actually new to cruising myself but I have been surprised by researching cruises that I thought would not fit but were the best experience for a senior couple (e.g. Disney's Mediterranean Cruise was just extremely well organized with excellent service, shore excursions, seminars/lectures, on-board activities...but again this was for the Mediterranean).
The more elegant lines like Cunard, Crystal, Celebrity do cater to a more experienced group....perhaps 50+ crowd.

Holland America is best suited for Seniors. There are very few children and most activities are geared for adults. The food and service is 5star!! I have sailed with them twice and loved it. There was bingo, dance lessons, fashion shows, golf putting contests, afternoon games for all sorts of interests, trivial pursuit, scavenger hunt, etc. The room service is outstanding as are the shows. Check them out.

specific, they even have an afternoon instruct for Seniors who won't be able to look to stay wide awake previous due (7:00 PM) for the night instruct. Bingo, minutiae contests, all styles of card video games happening.
