2 easy rules to follow.....dont over season, and dont overcook. If your using inexpensive cut of meat such as flank steak I recommend marinating. For ribeye or filet, salt . ,pepper, maybe a little garlic and chili flakes. get your grill hot first to sear in the juices, and you should have to flip it only once. And remenber keep it simple. Also remember to let the steaks rest for a few min before you cut into them or else the juices will just run out and you end up with dry steaks.

get your grill HOT first . add steak seasonings [i like Montreal steak spice] but lots of cracked pepper corns would be about the same.do both sides.[i pound it in with the back of a big spoon, so it wont fall off] then, sear the meat 1 min , turn over and lower the heat to med low [i like mine med well, so i let it cook for 4 min and when its seared well on the bottom, i turn again and add BBQ sauce {we love Diana brand} dont know if you can get that but any will do. cook another min and remove from grill. if you are trying to impress, 1 in thick New York striploin is awsome served with sauteed mushrooms. bon appetit!

Season a few minutes before they hit the grill to make sure that the moisture stays inside the meat.
If you season too early, especially with salt, it will bring the blood to the surface and dry out your steaks.

Marinate them for several hours. When you first put them on the grill, sear them on high heat on each side for a minute or two.
After they are cooked to your liking, make sure you let the meat rest for 5 minutes so all the juices and flavors settle in.

Season them with salt and freshly ground pepper.
Bring to room temperature before cooking.
Do NOT overcook. Use a thermometer if you are not sure.
Turn them only once.
