Funny thing about that question. They did a piece on this on TV just a few weeks ago. They asked a few drivers what they did. It seems that some have a bottle they use that is already set for them to use (I don't want to know the details) and others just go in the suit if they have to go.
So, if you are in the winner's circle when the race is done, be careful when hugging the winner.

Why does this get asked every week?
Its hot in the car they will sweat it out. Any healthy adult can hold it for a 3-4 hour race anyways. If something happens they can always go in the suit.

They may have occasional accidents but for the most part, racing as hard as they do, they sweat it out so they do not have to go.

Short answer is there is more likelihood of them being dehydrated in their 130 degree cockpit with their fire suit on than there is a chance of them having to pee, but in an emergency, there is no choice but to pee I guess...

even though they are drinking a lot of gatorade it sweats out of them pretty fast because it is so hot.

I'm not sure exactly how the system works, but I believe they are somehow able to urinate while in the car, and it is flushed (drained) our during pit stops (notice this weekend how they don't show the underside of the driver's side of the car much during pit stops.
