My favorite Italian inspired dish this time of year is to chop a few fresh tomatoes, add some fresh chopped basil and diced fresh mozzarella, salt and pepper, olive oil and balsamic and let sit while you cook some spagetti- then add the hot pasta to the sauce- yum. You can only do this when you have ripe tomatoes and fresh basil!

Italian cooking in the US is different than in Italy. The Mediterranean diet is based on: the everyday use of a great quantity of fruit and vegetables, the controlled use of carbohydrates (such as pasta, pizza, rice, bread ...), the choice of fish rather than meat, the use of olive oil instead of other fat . The herbs and spices are best fresh, and of course extra, extra virgin olive oil.

The answers you have are good, but don't forget to always have a can or two of good plum tomatoes on hand. Look for ones imported from Italy, they tend to let them ripen longer and have better flavor. And cheese. Fresh Romano or Parmesan that you can grate yourself.

*The most basic thing reqd. will be the pasta.........in diff forms !!!!
Then comes the ingredients to make their sauces ,,,,,,, such as tomatoes and onion and garlic and some herbs that give the food that italian flavour and yes, last but not the least, Olive oil !!!!!!
