Try making a fritatta--VERY easy; here's a start:
Cook up a chopped in a large frying pan with olive oil. When the onions are soft, add a can of sliced new potatoes (any grocery store). Cook onions and potatoes together till potatoes are golden. spread that out over the bottom of the frying pan and then pour in 6 beaten eggs (salted and peppered). Sprinkle with cheese, and let it sit like a huge omelette until the eggs are well set on the bottom, then transfer the whole pan to the broiler for three minutes. pull it out, flip it onto a big plate, and cut it like a pie. Easy, pretty, delicious...and you can use anything for the filling, not just onions and potatoes.

Pancakes make batter the night before....
I take jelly or preserves and dilute it with a little water...and add a couple tablespoons of butter or diet margarine....and heat it in a small pan on low....to pour over the pancakes instead of the same old maple syrup....or I cut up fruit like strawberries ...and have them with the pancakes..fruit always makes any meal special....
Bacon
Stewed apples...
peel apples and core...place in pan and sprinkle nutmeg, cinnamon and cloves and some sugar brown or white..(depending on how sweet you want them).. over them...lightly....now pour over enough water to cover and simmer until tender...they are so good with pancakes...as a side dish....
You can cook these also the night before so all you need is to warm them or eat them cold the next morning....
Hot coffee or tea is great with this breakfast...set up the pot the night before so it's ready for the fresh water...
Anything you can do the night before keeps you cool in the morning......

Mouse Traps.
Toast 6 slices of bread
Sprinkle with grated tasty cheese and cut into fingers.
Bake in a slow oven for 30-45 minutes until crunchy.
Store in an airtight container.
Vegemite under the cheese tastes nice and sweet.
Bacon sprinkles could also be added.

You can eat ANYTHING for breakfast-there's no law it has to be cereal or eggs. Try a cheeseburger, pizza, tacos or some other "non-breakfast" food that you like.

somethings that i like to eat for breakfast other than cereal with soy milk [which is probably my favorite though!:)] are vegan pancakes/waffles, tofu scramble, banana bread muffins, peanut butter on whole wheat toast, fruit salad, OATMEAL!, beans with corn, etc..
By the way, cereal doesn't have to be "boring" try adding stuff to it like fruits [bananas, berries, grapes, sliced apple,etc], dried fruits like raisins and prunes, add some fruit juice to it, nuts and seeds, add peanut butter in it, and if your really daring add a scoop of soy ice cream and/or soy yogurt on top.....the things you can add to any cereal are endless!! :D have fun!

How about a egg sandwich. Fry a egg to how you like it. I like mine runny! Then put it on a toasted and buttered english muffin with cheese and bacon or ham. Easy and yummy. I have also used bagels for my egg sandwiches.

I am from Italy and we usually eat only croissant and good cappuccino( not sturbuck-that is not cappuccino,it is the worst espresso caffe I ever taste with very boiled milk with boield,burned foam)

Crepes are soo yummy in the morning and they can be as light or as filling as you want them to be. There are so many different things you can put on/in a crepe.
