Two people are talking, one of them says something that the other takes as an attack on their beliefs and/or values (not a personal attack) and becomes defensive and even hostile.

Why do people do this, why it that when someone asks a question or makes a statement that asks a question of someone’s belief system that they become hostile instead of cool calm and collected, and asking for clarification?

Why do people instantly believe they others are attacking their beliefs? Are these people so unsure of their own beliefs that they attack out of fear or is it something else?

Please explain what you mean.

Because they have doubts about their own beliefs and are prideful.

If you truly believe and are humble, no matter what is said to you will not ruffle your feathers. Pride is the root to so much trouble.

various reasons. People get serious about the subject because they think eternity is at stake, and to have their belief about what happens after death challenged is a sure way to get people nervous and defensive.

Another reason may be the extreme differences between the spiritual paths under question. Sometimes people ARE attacking another person's faith. I'm a pagan, which may or may not raise eyebrows, and a Witch, which inevitably brings disbelief about the validity of my path from Christians. And since I was raised a Christian and now can barely listen to the dogma without wanting to roll my eyebrows, it is best that the subject doesn't come up, for both sides.

Of course,hostility should be avoided, and if the subject can be discussed with some mutual respect, it may help keep the situation calm.

It is definitely human nature.

They have confused themselves and taken their belief system as part of their identity. People do it with their nationalities, religions, races, even sports teams.

When something is said that challenges the image, they confuse it with a personal attack.

They aren't interested, in that area of their self-image, in being "right". They are interested in not appearing "wrong".

Changing their minds is out of the question unless you wish to totally discredit the group they identify with.

I'm not so needy that I have to do that to someone.

We are only human and the two topics that get the adrenaline flowing in our veins are Politics and Religion. (In mannerism school, these two topics are thought of as rude) : )
We believe something to be true to us and we defend it. Sometimes attack because of that wierd feeling we get inside when something we believe in is doubted.

Because there are so many people that do attack you, that when one really wants an answer, you figure hes another attacker.

When it comes to religion everyone thinks they are right... and most of the time they can't see why the other person won't believe the same as them.
