I just LOVE twice-baked potatoes sprinkled with paprika and cayenne flake...
And Delta Blues, a.k.a. the "Whoa! That potato is purple!" potato, is my favorite variety.

Potatoes can be fixed in even more ways than shrimp can, and I love most all of them.
My absolute favorite is fresh-cut french fries, available at your nearest state fair or your own kitchen. Mmmm, good, whether you use ketchup or just vinegar.
I find myself using 75% baking taters (Russets), 20% waxy boiling taters (reds), and only about 5% general-purpose taters (whites, although they include Yukon Gold and Delta Blues).
Oh, and I eat a lot of Atlantic taters. That's the variety grown for potato chip factories (although Costco has a house brand of thick-cut kettle-fried Russet chips that are mighty tasty).

I don't know the recipe but in Columbus Farmer's Market in New Jersey there is a place that sells what we call 'Jo-Jo Potatoes.' They are cut into small pieces and then coated in a batter, not sure if they are baked or fried after that. But we always get a bag and share them in the car on the ride home. Never had any better.

Mashed, with lumps and the skin left on, slathered in sour cream and ranch dressing.
French fried and doused with ketchup.
Homemade chips.
Baked.
Hashbrowns (crunchy outside, wiggly inside).
Potato soup.
Type of potato doesn't matter, although the small red ones hold a special place. Sweet potatoes are excellent too.

I love sweet potato casserole! I also like a plain baked sweet potato, but loaded down with butter. YUM.
I also love red potatoes in potato salad. And yes, twice baked potatoes are wonderful.
I also LOVE plain baked potatoes with LOADS of sour cream!

I like roasted garlic mashed potatoes, german potato salad, twice baked potatoes with the usual condiments of bacon, sour cream and cheese. I just like all kinds of potatoes in general.

unnn well i'm a big fan of baked potatoes (once i visited a clinic for old ppl and i had the most amazing week in my entire life everything was baked,and everyone was kind,and funny ^_^)no seriuosly it was fun :D
