I can't find the little mini red peppers to make pepper jelly....can I substitute hot red peppers and if so...how many?

I usually use a combo of bell peppers and serrano peppers... I dont' like mine super-hot, just a slight nip! I'm not sure which peppers you normally use and are proposing to use, so I can't help w/ quantities (esp. not knowing how many pints you are making) but you can sub any and all peppers for what is called for in the recipe. If they are much spicier than the original, maybe cut back by half and sub som bell peppers for color and texture.

I would just use the same amount your recipe calls for then taste to adjust - it will be hotter so you may need to ad some citrus to balance but it should be fine.
