Hello. I was looking to make my own Pina Colada and some recipes are different. Some say coconut milk and some say coconut cream. Is there a difference? I love pina coladas and was looking for more of a coconut taste than a pineapple taste. Was thinking of buying one of those premade TGI Friday's pina coladas and just adding the extra coconut milk/cream but didn't know if there was a difference. I appreciate any help. Thanks!

Coconut milk is clear and although tasty is not a good choice if you are looking for a coconut taste - stick with the cream it is white and thick and will produce the result you seek. Cheers!

NO! They are very different and CANNOT be interchanged in a recipe. This is one of the biggest mistakes cooks and bakers make. Coconut cream is at the store... it's just in a different spot than the coconut milk. Have her check the baking aisle. Coconut milk is derived from the interior "meat" of the coconut - without any major additives. Coconut cream ('cream of coconut') is much thicker is mixed with a large amount of sugar. This is typically used in the preparation of pina coladas. It will significant change the taste and consistency of your final dish.

Coconut *water* is the clear and sticky juice from the center of a pineapple. Coconut milk and coconut cream are white liquids.

You can buy canned coconut milk and coconut cream. I think you'd probably want to use the cream, if you're trying to emphasize the coconut taste over the pineapple.

According to Alton Brown, to make coconut *milk* -
place 2 ounces of freshly grated coconut meat into a small mixing bowl and pour in 1/2 cup of boiling 2% milk. Stir to combine. Cover tightly and allow to sit for 1 hour. Transfer the mixture to the carafe of a blender and process for 1 minute.

Two ounces of freshly grated coconut meat is about half a cup. Obviously, you can use the grated coconut from the store, but it won't taste as good.

To make coconut *cream* -
do the same thing, but double the amount of grated coconut.

My recipe for a good pina colada, however, involves a car key and a designated driver.

Coconut cream is very similar to coconut milk but contains less water. The difference is mainly consistency. It has a thicker, more paste-like consistency

Just buy TGIFriday's pre-mixed Pina Colada Mix. Depending how strong you like it, I add a little extra Captain Morgan. Blend with ice...it's awesome. If you have one of those Magic Bullet blenders, they're the best. Just fill the cup with chopped ice, add the mix and extra rum, and it takes 10 seconds.
