you might consider taking out 1 cup of the liquid, adding one Tablespoon of flour or cornstach, mixing well, and returning to the pot roast....this will help to thicken-up the liquid....good luck....

No, it won't ruin the roast. You may not be able to make gravy out of the juice (if that is what you wanted to do) as easily but it will not ruin it at all. The amount you put in does not sound excessive anyway.
Roast sounds good - how far away are you? LOL

No, but one bag of soup mix would have been plenty.
And you don't need all the water it would take to make soup.
Whole onions would have been just as good, if not better.
Just raise the lid a little or take it off for the last 15 minutes.
This will allow some of the water to evaporate, don't overdo.

You'll have watery gravy but it's easy to fix. When the meat and veggies are done strain the gravy into another pot and keep boiling it until you think it is thick and rich enough. You could thicken it with a little flour but it tastes better without.

By the description you put in the right amount - remember the water will cook out in the form of steam and you will have a lot less fluid in the pan when it's through.
