some say use this MSG, others say corn flakes.
whats youre take.
I want extra crispy like they do at popeyes.
Also, howdo they make their spicy chicken (popeyes)
I love that.
Trying to do it myself, but it just doesnt come out like theres.
Help anyone!

my current recipe is;
flour, spice mixture and
eggs with spices and chile sauce as the dip to make the flour mix stick.
I use garlic breadcrumbs inside the flour FYI.
I ouble dip the chicken for an extra coat, but
it still doesnt come out really crispy
what am I doing wrong

Popeye's Fried Chicken
A copycat recipe of Popeye's Famous Fried Chicken !
1 frying chicken, with skin cut up
6 cups vegetable oil
2 tablespoons white pepper
1 teaspoon cayenne pepper
2/3 cup all-purpose flour
2 teaspoons paprika
1 tablespoon salt
3 eggs
1. Heat the oil over medium heat in a deep fryer or in a wide, deep pan on stove.
2. In a large bowl, combine flour, salt, peppers, and paprika.
3. Break the eggs into a separate bowl and beat until blended.
4. Check the oil by dropping in a pinch of the flour mixture, If the oil bubbles rapidly around the flour, it's ready.
5. Dip each piece of chicken into the egg, then coat generously with the flour mixture.
6. Once the chicken is coated, it should be placed on a rack to allow the pieces to dry, which may take 20 to 30 minutes. Allowing the pieces to dry will provide for more even browning of the chicken.
7. To fry, heat oil in a heavy skillet over a medium-high burner until the oil is very hot. Place the chicken pieces in the hot oil, skin side down, one piece at a time. Leave enough space between pieces so that they are not crowded. This allows the pieces to cook and brown more evenly.
8. Continue to cook over a medium heat, turning until all sides are golden brown and the meat is cooked thoroughly.
9. As the pieces finish cooking, they should be removed from the pan and placed on a paper towel to allow grease to drain.

If you haven't been doing so, leave the skin on. The fat in the skin is what gets really crispy. Also, use an oil with a very high smoke point like peanut oil and make sure you don't crowd the chicken in the pan, which will lower the temperature of the oil making your end product greasy rather than crispy. I just use seasoned flour as a coating and I think mine is delicious and very crisp, but maybe you could look for actual batter fried recipes on-line which might add the extra crunch you are looking for.

I have never been to Popeyes. Here is how I do fried chicken. You can add extra spices to get what you like. It comes out crispy for me.
Here is my favorite. Heart attack special.
Southern-Fried Chicken
1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
1 teaspoon paprika
2/3 cup lard or oil, lard will give the best flavor.
1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.
2. In a large deep frying pan, melt lard over medium-high heat to 375 degrees. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paper towels.

dip the chicken in beaten egg then flour then repeat the step like 2 or 3 times then make sure the oil in a pan is hot so when you put the chicken in it frys it crispy ...
good luck
and use spicy seasonings mixed in with the flour to make spicy ness..

Try dipping in egg before you flour it, then fry. You could also fry it in a deep fryer. For the spice buy some Cajun spice.
