LECHE FLAN

Ingredients:
Caramel:
1 cup white sugar
1/8 cup water

Flan
8 egg yolks
¾ cup sugar
1½ cups fresh milk

Directions:
Preheat oven to 350°F. Fill a 13x9 roasting pan halfway with water. Let heat inside the oven while it preheats. This is the water bath.

Meanwhile, mix ingredients for caramel in a heavy-bottomed sauce pan. On medium heat, stir until sugar has dissolved. Once mixture boils, do not stir. Let mixture boil until it becomes a light golden brown. Immediately drizzle the caramel into a 9x5 loaf pan or into 2 llaneras. Tilt the pan(s) so that the caramel completely covers the bottom(s).

In a bowl, thoroughly mix the flan ingredients. Strain mixture into the prepared pan(s). Place pan(s) into the water bath and bake for 40 minutes, or up to 1 hour. A knife inserted in the middle of the flan should come out clean.

Cool the flan still in the water bath at room temperature for 30 minutes. Remove from the water bath and unmold onto a platter.

Basic White Bread

6 cups all-purpose or unbleached flour*
1/2 cup dry milk (optional)
2 1/2 tablespoons sugar or honey
2 1/2 teaspoons salt
2 tablespoons softened butter, vegetable shortening or oil
5 teaspoons active dry yeast or 2 (1/4-ounce) packets active dry yeast
2 cups very warm water (120 to 130*F / 50 to 55*C)

1. In a large mixing bowl whisk together 3 1/3 cups of the flour with the next 5 ingredients. Add the warm water. Beat on low speed of an electric mixer for 1 minute, scraping bowl frequently. Increase speed to medium and beat for 1 minute. Stir in remaining flour.
2. Turn dough onto a lightly floured work surface. Knead dough for 5 minutes then let rest for 5 minutes. Again knead dough an additional 5 minutes or until dough feels smooth and elastic. Place in a large, well-greased bowl and flip dough to turn greased-side up. Cover and let rise in a warm place (free of drafts) for 1 hour or until doubled in size. (Stick your finger in the center, if an indention remains, the dough is ready.)
3. Punch down dough and divide in half. Form into 2 loaves and place (seam-side down) into 2 greased loaf pans**. Cover, and let rise in a warm place for 45 minutes to 1 hour or until doubled in size.
4. Place oven rack in a position that allows the tops of the pans to be centered in the oven. Preheat oven to 425*F (220*C).
5. Bake loaves for 25 to 30 minutes or until golden browned and sound hollow when tapped. Remove from oven and immediately remove bread from pans. (Brush with melted butter if a softer crust is desired.) Cool loaves completely on a wire rack.

Makes 2 loaves.

* Self-rising flour can be substituted, but omit the salt.

** 9 x 5 x 3-inch pans or 8 1/2 x 4 1/2 x 2 1/2-inch pans.

Not much. No soda or powder puts a bit of a wrench in your plans. What DO you have? You could try No Bake Cookies: 2 cups white sugar 4 teaspoons cocoa 1/2 cup milk 1 stick butter 2 tablespoons peanut butter 1 teaspoon vanilla 3 3/4 cup quick oats In a medium size saucepan combine sugar, cocoa, milk and one stick of butter. It's best for butter to be at room temperature. Melt butter at medium heat and stir all ingredients together. Continue to stir until all ingredients come to a boil. Once boiling, remove from heat and allow to stand for one minute. Add vanilla and peanut butter and mix well. Stir in oats. Put a large sheet of aluminum foil or wax paper out on the counter and place little scoops of your new treat on it. Serve while still warm or at room temperature.

Let's start with the basics:

Fried Eggs

Scrambled Eggs

Plain Omelet

Pancakes

Waffles

Crepes

Those are some basic ideas, and you can go from there, with toppings, additives (like cheese in the omelet, etc)......
Hope this helped somewhat!!! Enjoy!!
