I am cooking shrimp scampi tonight. I usually do a pasta with a light sauce but i thought I would try something different....any ideas? Please and thank you!

shrimp scampi goes great over wild rice with french sliced green beans placed around the edge of the plate.

I would strongly suggest that you stick with the simple pasta and light sauce.......maybe a wine/lemon juice/garlic sauce would be nice.......here's the reason:

Shrimp and other shellfish have such a delicate flavor, that you don't want another flavor to compete/overwhelm the taste of the shrimp......I can't stress this enough........I went to culinary school and we learned what does and does NOT go well together...Enjoy your Shrimp Scampi!!! I do mine with linguine and a mixed greens salad and some good crusty bread to sop up the sauce........Darn, now I'm hungry.........

Heres a recipe:

Herbed Rice Pilaf:

2 tablespoons unsalted butter
1/2 cup chopped yellow onion
1 cup long-grain white rice
3 tablespoons thinly sliced scallions
1/2 teaspoon chopped fresh thyme leaves
2 cups chicken stock
1 teaspoon salt
1/4 teaspoon finely ground white pepper

Position rack in center of oven and preheat the oven to 350 degrees F.

In a medium oven safe saucepan, melt the butter over medium heat. Add the onion and cook, stirring, until soft, about 3 to 4 minutes. Add the rice and cook, stirring, until opaque (cloudy), and nutty in aroma, about 2 minutes. Add the scallions, thyme, chicken stock and salt and bring to a boil.

Cover the pan with a tight-fitting lid. Using oven mitts or pot holders, transfer to the oven, and bake until the rice is tender and the liquid is absorbed, about 25 to 30 minutes.

Using oven mitts or pot holders, remove the pan from the oven and let sit, undisturbed, for 5 to 10 minutes.

Fluff the rice with a fork and serve immediately.

Yield: 4 1/2 cups, 4 to 6 servings
Prep Time: 5 minutes
Cook Time: 40 minutes
Inactive Prep Time: 10 minutes

Generally speaking, white wines go best with seafood. However, with the generally high level of garlic in the scampi (I'm not sure how you're making it) a merlot or chianti may fit well.

We like rice pilaf with our scampi. I serve it right on top of the rice and garnish with chopped fresh parsley and a lemon wedge and a green salad on the side.

Sauvignon Blanc, Sancerre, Muscadet. You want something that is going to compliment the flavors in your scampi, not mirror them. Crisp, bold, great nose, tantalizing palate. The above three will give you that.
