My daughter, now 17, has been veggie for 10 years and is fit and healthy and a normal weight.
She eats Quorn meat substitute products - you can get mince, chicken-style pieces (great for stir-fris and curries), pies, nuggets - almost everything. They're high in protein.
Asda also does a great beef-flavour soya product which is wonderful in stir fries - even the meat eaters in our family like it.

I'm a vegetarian too. It's really easy to find healthy meals that are nutritious. Here are some websites with lots of vegetarian/vegan recipes:
http://vegweb.com/
http://allrecipes.com/Recipes/Everyday-Cooking/Vegetarian/Main.aspx
http://www.ivu.org/recipes/
http://www.toptastes.com/recipes/entreesvege.htm
All you really need to do is go to a search engine and type in "vegetarian recipes".
Everyday you should make a list in your head of what you plan on eating that day. Make sure it has your daily requirements of fruits, veggies, grains, and dairy.

You can maintain your weight and not eat meat. The biggest thing is to get protien into your diet and it does not have to come from meat. Many vegetables have them and alot of health food stores sell things that have protien but no meat.

Peanut butter will help you not lose weight. A peanut butter sandwich and a glass of milk makes a complete protein.

I would first like to let you know that vegeterians don't eat fish (ppl she won't believe me) lol
Use alternatives like yogurt, cereal, fruit and soy for breakfast
I personally like eggplant and tofu for lunch, not really a dinner person.
Use this site for ideas:
