Because the people who wrote scripture had no idea what the bones they found were.
Various religions have tales of giants and monsters which may, in part, have been inspired by fossils that they found. A compelling case can be made that many mythic creatures are actually misidentified fossils. See below for a very good discussion or (if you are in New York) go see the exhibition.

Well, there are actually lots of answers to this question. It depends on your views really. Some people claim that the major world religions forgot to mention them at all, while other devoted believers of their religion specify that we still had dinosaurs, they were just much smaller by the time humans came around, which would lead us to believe that the universe really didn't happen in seven days.

Dinosaurs were not discovered until we had more advances in science. We only know that they existed because of the research done on fossils. The Bible was written before any of these technologies were available.

Even though they aren't specifically mentioned, there is room for interpretation that dinosaurs roamed the earth in Genesis. Somewhere in the 1st chapter (round about the 4th or 5th 'day' of creation I believe) we see that God brings forth several different unnamed flying creatures and monsters of the sea...
That's a possibility; I'm not stating it dogmatically.

The Bible was written quite abit before dinosaur was coined
maybe that why there are no diinosaurs in the Bible--check lizards--etomology

Beyond the opening chapter of Genesis, the dinosaurs were gone by the time of man and the Bible is the connection between man and G-d.

God created the earth, and everything else, long, long ago. When God was "drawling up the blue prints" so to speak, for man, satan was paying close attention. He decided, before his fall, he could create man and animal just like God could.
After his fall, when God cast him to the earth, satan gave his hand at creation. Hence, the dinasours and the first form of "human."
God left it go for a long time. Then, when God said: "ok, it's my turn" he destroyed what satan created and then created his own form of animal and human. Hence, the Adam and Eve thing.
