I have just learned how good it is to cook with bacon grease! I'm going to start a can of it to keep for cooking. Do you refrigerate it or just put it in the cabinet?

When I was a kid growing up, back in the '40s, my grandma always had a can of grease on the back of the stove. It was used for everything. I think it was a mix of bacon grease and lard. There was no such thing as refrigeration on a farm in the middle of Nebraska with no electricity. There was no such thing as vegetable oil back then. My mom did the same into the '50s then started buying Crisco.
I know cooking with bacon grease and lard is a heart attack special, but it tastes so good.

Yes, keep it refrigerated. I usually keep it in a canning jar. That way i can melt the whole jar in the microwave occasionally. This lets the dark solids settle to the bottom. Then I pour the nearly clear bacon fat from the top into another jar. That keeps my bacon fat nice and white and also helps it keep much longer because the dark parts are what will go bad fastest, making the grease rancid.

Grease backed from bacon - you should always cook bacon in a dry pan - the fats are probably good for other dishes though are too small to carton in one go. There is no need to preserve grease in a deep freezer - and ordinary fridge is sufficient and cold enough to stole the whole.
This fat would be great for basing chicken and patatoes in the oven.

Isn't it great to get that flavor when you use bacon grease? I refrigerate mine, my brother in law is from the south and does his collard greens and everything with it and he refrigerates it also. I think if you leave it out it may go bad faster.

It depends how fast you are going to use it, if you keep it out too long it will go bad, most fats will. Keep some out to use and the rest refrigerate. Good Luck

Yes, you have to refridgerate it always. I have a client who put it under his sink and within a week, it had mold.
It is awesome for when you don't have bacon but still want that flavor.

Yes it is best
I do not know how long it takes to go rancid.
but you can make Biscuits N Gravy for many occasions.
Some food freaks would go nuts on hearing of your adventure.

Refrigerate it, if only for cleanliness. Also, if you keep it open it will smell really bad. So keep it sealed in the fridge. :) x
