When he says "Let us make man in our image", "our" is referring to himself and his son Jesus Christ. If you look at Proverbs 8:20, it talks about how Jesus was God's Master Worker. Meaning that Jesus played a chief role in creation.
Also, to address the questions asked by "punch". Humans were originally made in God's image because God is perfect and He lives forever. He created humans to be perfect and to live forever. After Adam and Eve sinned and passed that sin on to their offspring (all of mankind), we no longer are perfect. So when man was initially created, we were in God's image. Because humans are now born into sin, we do not reflect the image of God that we were intended to.

It's a holdover from the Canaanite mystery cult that eventually evolved into Christianity. The cult had a whole pantheon of gods, and Yahweh (who would eventually morph into Joe Hovah, the Christian god) was their god of lightning.
In the original Hebrew, Genesis 1:1 uses the word "elohim" which is the plural form -- technically, the first line of the bible SHOULD be translated as "In the beginning, the GODS created the heavens and the earth..."

Depends. It probably is a consummate plural, meaning that "Elohim" is the consummate definition of "El". They used to do this in Egypt, where they would call the Pharaoh, "Pharaohs", implying that he is the consummation of Pharaohood.
It is possible that it is a hidden, primordial revelation of the Trinity. If this is the case, then God would have known that no one would see it until he explicitly revealed His Triune nature later.

If you are seriously intersted in a logical answer to this question I sugest you go to the attatche link and read. I submit that the bible has been changed and rewritten to match doctrine of the catholic church. Thus the nicen creed exc. What we need is other sorces.

You are trying to read something through the minds of people who believed that the earth was flat. Mankind, through additional knowledge has abandoned the many of the beliefs of biblical people. Unfortunately, Religion has said to keep these ancient beliefs even though many have been proven wrong. Keep this in mind when you read the Bible.
