Two reasons come to mind:
1. Probably to cover the expense of making a seperate batch of sweets and ice creams.
2. It's a specialty food so the manufacturer can charge more.

I am writing to tell you what an incredible impact these methods had on my life! I have had type 2 diabetes for 27 years. Because they are specially made for diabetics' so that their blood sugars aren't affected. As you are probably aware, Diabetics' need to be careful of their sugar intake and calorie intake. Although they use less sugar in the recipe, sugar-less sweets are considered specialty items, which adds to the value of the item. From a business point of view, less people buy diabetic sweets, so the producers have to charge those who buy them more, to cover all the loses.

Because they have to use more expensive sugar substitutes and other ingredients that're not used in regular sweets and ice cream.

it use to be because of the extra work and different ingredients to make it. but with all the artificial sweetners being a staple in today's kitchens, the only reason they charge more for it is because they can.
