Tell her to throw away all those demented Cosmo crap magazines. The one's that tell you unpainted toes means your vagina smells bad and all the crap. Lord have mercy! I have yet to read a Mens Health that says if your knees show your boys are to hairy.

LMAO! I loved AlexM's answer! Seems he hit it right on the head!
It's so easy to fall in to the "flock" mindset that the media portrays. Even some guys do it, ie. she's on tv ... must mean she's more than your avarage gal! Have you seen some of the ugly girls on the tv that the "world" thinks is beautiful just because they are on the "boob" tube! No offense if you are a Nicole Richie fan, but I think Nicole Richie looks like a chihuahua and there are so guys that is asked says she's hot! There is beauty in everyone not just the thin! The sooner the world realizes this the better off it will be!

They get this idea from the media. It's even advertised for little kids. I remember I asked my mom why there weren't fat barbie dolls, and she said the media doesn't want to advertise fat/bigger people.
You can convince your girlfriend this by showing her someone that is bigger, but has the same amount of confidence and someone who's a size 0. She probably feels she needs to be smaller because there's so much pressure on being small. She probably can't help her size, and she'll just have to grow comfortable in her own skin. You can remind her, you'll love her no matter what size she is and shes still beautiful and the same person no matter what the scale may say.

Mass media.....at least people know the cause.
More difficult to understand is the fact that much of it is predicated and made worse by women....not the men having unrealistic visions of what is right/acceptable.
Recent studies have shown that girls are much harder on themselves, and subject themselves to more scrutiny from mass media then males. That they are less likely to become happy with their bodies and physical appearence, and that it is very hard for a man to reverse this....that it is internal, and the woman must adjust her preceptions.
The best you can do is assure her, be there, be comforting. yes we all have the crazy notion that we want the model (girls to be more like them, and guys to be with them)...but what we need to do as a race is understand that this is programed behaviour, recognize that they are unrealistic visions, and that when we have them and think maybe I'm/my GF isn't pretty enough, that we are being selfish, immature, and becoming a slave to a world that doesn't exist.

They get the idea from tv....all of these celebs are on a crash diet of....uh yea starving. Try to find a girl not carrying around a tabloid mag everywhere she goes.
Now you have a girlfriend....the only thing I can tell you is to tell her she is beautiful every single day. Guys think that they say it enough when they don't. We think oh he's looking at this girl and she is so much skinnier than me, so I have to look like that.

You probably cannot get your gf out of this mindset.
Girls like the idea of being a model.
Models are typically tall and very skinny.
Girls get it stuck in their head that this means beautiful.
Once it is in their heads, you cannot erase it.
They simply have to grow up and learn to let go of their insecurities.

I have no idea where we (women) get that idea.
my boyfriend told me that he loves me how i am, but if i wanted to work out and eat healthy then by all means. He explained that he would love me no matter what, that we were meant to meet each other and be together. He told me that wanting to be healthy is good, but wanting to be Nicole richie skinny is not. He told me how girls like that aren't attractive, that they look like they are ill, and going to die.
It took a little bit for it to sink in, but now i understand.

TV. Movies. Models. Stars. Etc.
Also, they always think that the skinnier girl gets the guy... Love makes you think weird and not clear.
