I like the crusting. It stays soft. At that age, they get the cake and the icing usually all over themselves. Face, hair, fingers, shirt! Have fun!

If you use the right attachment that makes his hair stand up the crusting will allow you to make the cake the night before and have a crisp looking cake, delighting the birthday.

Butter cream will crust up no matter what after it has been exposed to air. The secret is getting the butter cream then the fondant on the cake in a timely manner. BTW avoid fondant it is a waste of time and money since everyone is just going to peel it off and put it in the trash anyway.
