If it is just going to be two of you, why not take your dad. Who cares if your mom likes him or not, she will understand if you want to spend time with your dad.

If your mom is going to be there also then take her boyfriend. They would be happy with your decision and your dad should understand. If your mon is not going on the trip with you then take your dad so that you two can spend some time together.

It sounds like everyone would have a better time together if you took your mom's boyfriend. Go somewhere else alone with your dad.
