You've got to watch what you select if you go to restaurants, especially chinese restaurants. The meals can be very high in sodium and seasonings/sauces like soy sauce add even more.
Asparagus Frittata ( Can be eaten for breakfast,lunch or dinner=) So Good!
1 tsp unsalted butter
1/4 cup onion (chopped)
5 asparagus spears (steamed)
2 large eggs
2 large egg whites
2 Tbsp water
4 Tbsp Parmigiano-Reggiano (grated)
fresh ground black pepper
Preheat the oven to 400°F.
Heat 1/2 teaspoon butter in a small non-stick sauté pan over low-medium heat and add the chopped onion. Cook until translucent and set aside.
Slice the base of asparagus crosswise into small rounds. Leave about 2 inches of the tops intact. Set the tops aside to decorate the top of the frittata.
Whisk the eggs, egg whites and water in a bowl until frothy.
Heat the remaining butter in a small non-stick skillet over medium- high heat and when hot add the egg mixture. Reduce the heat to medium and simmer for about 2 minutes. At the end of one minute add the onion and chopped asparagus.
Arrange the asparagus tops in a star pattern on top of the cooking egg mixture. Scatter the parmesan cheese over the top and then fresh ground black pepper to taste.
Place in the oven. Reduce the heat to 350°F degrees and bake for 10 - 15 minutes until it puffs and is firm to the touch.

LOW SODIUM CHICKEN STIR-FRY
16 oz. chicken breasts
1 carrot, peeled, sliced
2 tbsp. cornstarch
1 stalk celery, sliced
2 tbsp. sherry
1/2 c. bean sprouts
2 tsp. low sodium soy sauce
1/2 c. mushrooms, sliced
1 tsp. canola oil
1/4 tsp. ginger
1 c. onion, sliced
1/2 tsp. garlic powder
2 green onions, sliced
4 oz. water chestnuts, sliced
Trim the chicken of all visible fat and remove skin. Cut into bite-size pieces. Place chicken in a glass bowl and sprinkle with the cornstarch and add the sherry and soy sauce. Toss the chicken in the sauces and marinate in the refrigerator for 15 minutes.
In a large skillet coated with cooking spray, saute the chicken 2-3 minutes. (Save the marinade.) Add the oil, onions, carrot, celery, sprouts, and mushrooms. Saute the vegetables with the chicken 3 minutes more (for crispy vegetables) or longer (for tender vegetables). Add the marinade, seasonings, and water chestnuts. Cook 2 minutes more. Serve over rice.
LOW-SODIUM CREOLE OVEN-FRIED CHICKEN
1/2 frying chicken
White pepper
1 c. flour
Vegetable cooking spray
1/4 tsp. ground thyme
1/2 tsp. paprika
1/4 tsp. granulated garlic
Preheat oven to 375 degrees. Remove skin from chicken; cut into pieces and season with white pepper. Place flour in bag or bowl. Mix in last 3 ingredients. Shake chicken in bag of flour mixture. Remove and shake off excess flour. Spray baking pan with vegetable cooking spray. Place chicken in pan. Bake 45 minutes or until done. 1/2 chicken = 2 servings.

Creamed califlower cooked in low sodium chicken broth, 1 can of broth, then mash.....Yummy! Add a small amout of butter if you like and a little milk and garlic powder, pepper. You can also do this with potatoes or pasta noodles.
