Hiccups occur when diaphragm contracts repeatedly causing the opening between the vocal cords to slam shut, generating the hic sound. Hiccups may be due to fast eating with the chance of swallowing air, or eating too much foods causing irritation of the diaphragm.
Recently (2007) Jennifer Mee of St. Petersburg, Florida suffered from constant hiccups, 50 times per minute for 36 days!

a hiccup is an involuntary spasm of the diaphragm; typically this repeats several times a minute. the sudden rush of air into the lungs causes the epiglottis to close, creating the "hic" noise.
hiccups may be caused by pressure to the phrenic nerve by other anatomical structures.

irritation to the diaphragm, the muscle with which you breath, usually caused by eating too fast, or not chewing adequately and swallowing large chunks, this irritates the diaphragm where the esophagus passed thru it on the way to the stomach. You will find that if you concentrate on relaxing that muscle and breathing slowly, the hiccups will go away.

a build up of gas... and swallowing to much air causes them too...
