Olives are a fruit. The definition of fruit has nothing to do with having a sweet flavor.
Here's the definition, from Answers.com
"The ripened ovary or ovaries of a seed-bearing plant, together with accessory parts, containing the seeds and occurring in a wide variety of forms."
Later in the definition, an alternate meaning says "usually sweet", but that is, of course, not a requirement.
