1. Spanish
2. Latin
3. French
Some people say Spanish is the easiest language to learn. English would be the hardest language to learn.
In all honesty I have taken classes in these other three languages but never use them. I only speak English fluently.
Chinese and Asian langauges are written different than English and are considerably different in ways so there'd be a learning curve.

Because I learned English and Spanish simultaneously and I have taught both... I have to say:
That this is not a fair question. First of all, to me, any language that does not use the alphabet is harder than those that do. But for a person who has grown up used to Chinese characters or Arabic glyphs... the alphabet may actually look pretty weird.
So, I am going to stick to what I know... that is... among languages that use the alphabet, I'd say
French is easy
Spanish is easier
English is the easiest
I am sure that many will disagree.
Great question!

Since Spanish was my first language and became fluent in English at 5 yrs old:
1. Easier - German because the structure and grammar is alot like English
2. Easiest - Italian because it has the same roots and even some same words as in Spanish
3. Easy - French because it is in the same branch as spanish and italian.
Ususally knowing one language in the given branch, the rest in that same branch are easy to pick up. Thus, I can learn Romance Languages the fastest.

1. Easiest language is Esperanto. No irregularities (verbs, nouns, adjectives, etc., all behave the same). Ingenious system for creating compound words which minimizes the amount of memorization necessary without sacrificing expressiveness or clarity.
2. I hear that Indonesian is a very straightforward language to learn, though it does have a few of its own quirks. Malay is very similar.
3. Chinese, or maybe to a larger degree, Vietnamese, because they have absolutely no word inflections.
I am totally flabbergasted as to how people are saying that Latin is one of the easiest languages. Did you ever study it, or even glance through a chart of the Latin verb? Give me a break.

I think it depends on what you know.
Knowing Spanish made French easy... If the languages are in the same language branch, they should be easy to learn.

If your native language is English (I don't think so).
1. easiest = Dutch has the most English (Germanic) based vocabulary, but word order in a sentence is difficult
2. easier = Spanish, would be closer To English word order in long sentences, and easier to practice if you live in the USA.
3. easy = French, has thousands of words similar to English, a word order close to English, but pronuciation and spelling will be the biggest problems for an English speaker.
