It happens to everyone at some point. I just say, "Oh my, I'm so sorry, how embarrassing, don't you hate when that happens?" Whatever, they've done it too, so not the end of the world but do make sure you apologize and not try to pretend it didn't happen. At that point it becomes rude and not just some little accident that happens to everyone.

i always call attention to it so they dont think im trying to pretend it didnt happen and we can laugh about it and move on. i do it when i get really excited because i talk super fast anyway and if it happens ill just say o0o0 i just spit on u sorry about that and then ill keep going with whatever i was saying....works like a charm..no ones ever been offended by it..its not like a pulled a Pumpkin vrs New York and spit on someone on purpose..ewwww

I apologize and explain that it happened by accident, not on purpose.

laugh it off. If you laugh, most people will laugh with you and all will be forgotten. It may be embaressing, but it happens. Unless you do it constantly, people won't hold it against you.

"Oops... sorry!" or "Oops... excuse me!" is what I say if I accidentally spit while talking. It's really no big deal... everyone's done it.

You should suck it in, swallow, then apologize to the person you are speaking to.
