Because out of pure coincidence, Cortez and his men showed up on the precise day that the native's prophecies predicted their God would return. Also it was predicted that they would come from across the sea and that the God's legs would be white and Cortez was wearing white stockings.
Once Cortez realised that the natives thought they were divine beings, he played along, realising that this gave him an advantage.
Then he took all their God and jewels, killed most of them and took their king captive. Nice huh?

EDIT: and vorenhutz is right, this is about the aztecs not the incas

Well, it was a simple case of misunderstanding.
The Inca had legends of a group of white or pale skinned men who came and founded the early Inca empire. They were eventually chased away by neighboring tribes, or in some versions they sailed West.
In any event, the Inca thought that the Spanish were these returning Gods because they had pale skin.
Simple misunderstanding.
