I'm curious about the origin of this idea as opposed to a plain old duality of the physical body and the spirit. Why would it be important or necessary to distinguish soul and spirit as two different parts?

As per Bhagavad Gita... the soul and spirit are the same! The soul atman is made up of pure cosmic energy that is indestructible. It is this spirit... our soul atman within that manifests a body to work out its karma... cleanse itself of the impurities within!
As the metal within an ore cannot separate on its own... the soul atman within also cannot purify itself in the absence of a body. Every soul atman starts its cosmic journey as an amoeba (single cell formation)... further evolving into multi-cell formation, then insect life, plant life, animal life and finally the form of a human being. It is as a human being... the highest manifest stage in the cosmic life cycle that the soul atman within liberates itself finally from the cycle of birth and death.
Only as a human being... the soul atman within reaches the last leg of cosmic life... the 8.4 millionth manifestation when a human being gains enlightenment (kaivalya jnana) and finally salvation (moksha)! The purpose of human life is not gaining a seat in heaven. Having regained its original pure pristine form... every liberated soul atman finally goes to the kingdom of God (aka Baikuntha in Hinduism)... a point of no return!
The Christian idea of a trilogy of body, soul and spirit is erroneous! Apart from the soul and the body... what rules the cosmic system is the mind. No individual human being has an independent mind. The mind of the whole Cosmos is one. We have reservoirs of mind plus and mind minus from where flow the positive and the negative thoughts invoked by the brain of all human beings. As is our karma, so is the flow of thoughts to our brain!
Those indulging in wanton desires and materialistic riches invoke negative thoughts from the reservoir of mind minus. Others having a sunny disposition and godly thinking invoke positive thoughts from the reservoir of mind plus. As is the flow of thoughts to our brain, so are we! At any given point of time... every human being is the sum total of all his thoughts! Mind acts as the connecting link between an independent soul atman and Almighty God! Although these verses seemingly present humans in three parts, the Bible also uses spirit and soul interchangeably.
The idea of this teaching is that you are born body and soul, but when you are saved you become body, soul, and spirit. But, truth be known, when you are saved you're soul/spirit is reborn, inherits eternal life immediately, and your body awaits its rebirth till the return of Christ.

Basically from the teaching that man was made in the image of God. This is metaphorical and indicates a triune being. One being of three parts. And the three are equal and inseparable. Just as the Trinity is so goes man in his three parts.
