Always cook eggs on a medium to medium low heat if you cook them slowly they get fluffy and taste much better. Simply whip your eggs(3) - add 1 T milk or water and a dash of salt and pepper - pour into a preheated and oiled (butter/cooking spray/ghee your choice) then leave uncovered and let cook until the edges begin to dry - at this point you may add your filling - cheese, mushrooms, peppers, ground meat, etc - then use your spatula to gently run completely around the egg - slowly wiggle the spatula under the entire egg and gently fold in half and readjust to center the now folded omelet - cover and let cook about 2-3 minutes uncover and test with a toothpick to make sure egg is completely cooked (you will only need this trick the first few times once you have succeeded a few times you will be able to tell by the look) remove to a plate and serve. Using a non stick skillet on low heat melt 1 tablespoon butter. Scramble 3 eggs in a bowl and poor into pan turned up to medium. Stir eggs with a rubber spatula until the parts you stir no longer easily fill up with the liquid part. This is when you should add any toppings like cheese or whatever you like
( if using vegetables you should cook them by themselves first because they will not cook in the omlette) Let it sit in pan for 30 seconds. Using the spatula and holding the pan at a slight angle begin to roll up the omlette like a cigar and let it roll out of the pan onto the plate. Done

first we'll assume you have a good non-stick omelet pan. One with sloping sides. Then we'll melt a tbsp or 2 of butter, swirling pan to coat all interior surface. Over medium heat, we'll add the egg and water mixture, not egg and milk, and swirl again to coat interior. As eggs begin to cook around edge, lift gently with a fork and let uncooked egg mixture run underneath cooked portion. When all loose egg mixture is removed in this manner, give the handle of the skillet a good shot while holding the skillet at a 45 degree angle and let the omelet roll itself up and out onto a plate.

Put all ingredients in pan , let it sit for a minute, when the middle starts to bubble and the edges look golden then flip it.
i guess thats kind of pancake method-ish. But, If that doesnt work, just keep moving it around so it doesnt stick , move it around while holding the pan and just shaking the pan a bit from side to side. If you can lift the side of the omlette and peek under to see how its doing, then thats good.

this is how i do it, i prewarm my pan, for every egg i use, i add 2 teaspoons of water, then whip them very fast and hard, add spices, pour into warm pan, cook on low heat, covered, when top looks down ,add any meat r cheeses, fold in half and let cook until cheese is melted.
