If let's say you were physically attracted to this girl and you like her personality, would you go out with her knowing that she's a virgin? Does sex matter or not really?

I wouldn't be concrned with her virgin status. I only date girls I like anyway. and never for sex...that's what marriage is for.
In fact her being a virgin would be a plus.... It would be something she'd bring to our wedding bed. So romantic.

Firstly, getting attracted to somebody physically depends on ones mental compulsion. And with the passing of time she would establish physical relationship with somebody and would no longer be a virgin. If she also feels the same way as I do and does not object to have physical relationship with me I would not mind. One more important thing is that getting attracted to each other sex do matter.
