Brine them in salt water for at least 2 hours, then marinate them in olive oil minced garlic salt and pepper......pork chops need salt without it is flavorless. The garlic penetrates the meat some how.......also a small amount of rosemary.

Sage Cinnamon, onion salt. and Lawreys seasoning salt. Let them sit spiced up with a little cheap wine overnight. Yum!

I use Adobe seasoning...get it in the Hispanic food section in the grocery store.
When making a pork roast even ....I take a big knife and jab the meat pretty deep and pour the adobe in the hole I made...I do this a few places in the roast....Oh man..it is soooo good..
Learned it from a hispanic friend, they make some of the best tasting foods.

Seasoned salt (like Lawry's) and LOTS of freshly ground peppercorns (preferably a gourmet mixture of corns).

Sprinkle both sides liberally, pat gently into meat with hands, and let stand at room temperature at least 30 minutes before cooking.

Try some ground fennel, even better on ribs mixed in with the basting sauce, pork absorbs flavor so well.

I would recommend poultry seasoning or Mrs Dash classic for a really lovely taste.
