There are two ways - the easy way and the tough way. The easy way is you poach the sting ray wings in slow simmering water for about five minutes. The tough way is you get two pair of pliers and a sharp knife. With the knife you make cuts big enough so you could grab a hold of the skin with pliers. Do this also on the other side. Then pull the skin off with the pliers.

You need a VERY sharp fillet knife ,10-12". Cut off one "wing" and slowly peel back the skin as you cut.

PS: Don't let the meat go to waste. Rays taste similiar to scallops when you "fry" them. After "skinning" each "wing", get a sharp cookie-cutter and make "rounds" about the size of a Half-dollar. Fry them in peanut oil with a "Tempura" or your fav batter.

Don't eat the HUGE ones. Anything over 10-15 LB's may have "health issues".

Crikey! Stingray leather would be a beauty.
