I always serve a salad, a veggie, and a meat when I am in a rush. A lot of times it will be a bag salad, frozen veggie, and a roasted chicken from the grocery store. Healthy, but good and fast!

It depends on what the entree is. For example, my family likes curry. If I make that, I make rice as the starchy side dish, serving the curry on top, and serve either a green salad or fruit to round things out. I don't go to the trouble of either making or buying and reheating naan. If I make a pasta (my son's favorite is spinach noodles with a little bit of crumbled sausage): I usually skip the bread because the pasta is so hearty--okay, heavy. :) A green salad is nice with this, but if you have picky kids to serve, you can also serve either a fruit (or fruits) that you know they like (most kids love watermelon and grapes), or a vegetable that they won't run away from. My 7-year-old likes ANY kind of fruit, spinach, or edamame beans (I'm guessing kids like those because they're salty.)
So I suppose my answer is 3. Just stay creative and flexible and you'll be fine!

2 or 3 is ok occasionally. As long as they eat healthy most of the time--its ok.
