Easy Zucchini Biscuit Bars
3 cups thinly sliced zucchini, unpeeled
1/2 cup finely chopped onions
2 tablespoons fresh parsley, chopped
1/2 teaspoon salt
1 garlic clove, minced
4 eggs, at room temperature, slightly beaten
1 cup baking mix (bisquick or similar)
1/2 cup grated parmesan cheese
1/2 teaspoon oregano
1 dash pepper
1/2 cup vegetable oil
1. Preheat oven to 350 degrees.
2. Combine all ingredients in a large bowl and mix well.
3. Spread evenly into a greased 9 x 13 inch pan.
4. Bake for 35 minutes or until golden brown.
---------------Zucchini with Dill and Butter
INGREDIENTS:
* 2 medium zucchini, unpeeled
* 2 tablespoons melted butter
* dried dillweed
PREPARATION:
Cut zucchini lengthwise in half; cook in about an inch of boiling, salt water for 12 minutes, or until tender. Drain zucchini; brush with melted butter and sprinkle with dill.
Serves 4.

INGREDIENTS:
* 1 cup vegetable oil
* 2 cup sugar
* 3 eggs
* 2 tsp. vanilla (I always use pure vanilla extract)
* 2 cups flour
* 1 tsp. baking soda
* 1/2 tsp. baking powder
* 2 tsp. cinnamon
* 2 cups grated zucchini (leave skins on)
* 1 cup walnuts
PREPARATION:
Mix oil and sugar. Add eggs, one at a time beating well after each addition; blend in vanilla. In a separate bowl, sift together the flour, baking powder, cinnamon, and baking soda. Add sifted dry ingredients to first mixture; alternating with grated zucchini.
Fold in chopped nuts. (Batter will be a bit thin.)
Pour into greased and floured 13x9x2-inch pan. Bake at 350° for 55 minutes.

2 cups peeled and grated zucchini

1/2 cup nuts
3 cups flour

Stir together eggs, oil, sugar, zucchini. Sift together flour, soda, salt, cinnamon, and baking powder. Add to zucchini mixture. Stir in vanilla and nuts. Bake at 325 degrees for 1 hour. May need 15 minutes more. Cool completely before freezing. Makes 2 loaves.
------------Chocolate Chip Zucchini Bread
2 cups grated zucchini
3 eggs
1 cup applesauce
2 cups sugar
1/2 cup vegetable oil
3 teaspoons cinnamon
1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 1/4 cups flour
6 ounces chocolate chips
1/2 cup cocoa
Grease and flour two loaf pans. Stir together zucchini, eggs, applesauce, sugar, and vegetable oil. Add the rest of the ingredients. Divide batter between the loaf pans. Bake at 350 degrees for 45 minutes. Reduce temperature to 300 degrees and bake an additional 15 minutes. Makes 2 loaves.

3 eggs
1 teaspoon baking soda
1 cup vegetable oil
1/4 teaspoon baking powder
2 cups sugar
1 teaspoon salt
2 teaspoons vanilla
3 cups flour
2 cups zucchini, grated
3 teaspoons cinnamon
1 1/2 cups chopped walnuts (optional)
1 8-ounce can pineapple, drained
Preheat oven to 350 degrees. In a large bowl, beat eggs until frothy. Stir in oil, sugar, vanilla, and zucchini. Add baking soda, baking powder, salt, and flour. Add nuts and pineapple. Pour into two greased and floured loaf pans. Bake for 1 hour.
---------Zucchini Cheddar Bread
1 c. chopped onions
1/4 c. butter
2 1/2 c. Bisquick
1 tbsp. fresh parsley, chopped
1/2 tsp. thyme
1/2 tsp. basil
3 eggs
1/4 c. milk
1 c. grated cheese
1 1/2 c. to 2 c. shredded zucchini
Saute onions in butter. Cool a little and then add remaining ingredients. Pour into an 8x8-in. baking pan and bake at 400 degrees for 40 minutes.

Here is a quick and easy one:
45 min
1 1/2 lbs zucchini, grated and well drained
1 medium onion, chopped fine
1/2 lb sharp cheddar cheese, grated
1/4 lb swiss cheese, grated
4 eggs, beaten
1/2 cup half-and-half
1 tablespoon flour
1/4 teaspoon salt
black pepper
Saute onion in butter until golden.
Mix cheese with zucchini and onion.
Add the remaining ingredients.
Mix well.
Pour into a 9-inch greased pie plate. (No crust needed!) Bake at 350 degrees for about 30-35 minutes or until center is set. Serve with a salad for a light meal.

Greeked Zucchini
INGREDIENTS
1 medium zucchini, halved and sliced
1/4 cup diced red onion
1/4 cup diced green bell pepper
2 (4 ounce) cans sliced black olives, drained
1/4 cup crumbled feta cheese
2 tablespoons Greek vinaigrette salad dressing
1/4 cup grape or cherry tomatoes, halved
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Spray a large piece of aluminum foil with nonstick cooking spray. Layer the zucchini, onion, pepper, and olives onto the center. Sprinkle with feta cheese, and drizzle with vinaigrette. Fold into a packet and seal the edges.
Bake in preheated oven until vegetables are tender, about 30 minutes. Open the foil packet, turn the oven onto Broil, and broil until the feta lightly browns. Add the grape tomatoes and serve.

ZUCCHINI PICKLES
1 quart Heinz distilled white vinegar
2 cups granulated sugar
1/4 cup salt
2 teaspoons celery seed
2 teaspoons ground turmeric
1 teaspoon dry mustard
5 lb. (5-6 inch) zucchini, unpeeled, cut into 1/4-inch slices
1 qt. thinly sliced onions (4-5 medium)
Combine first 6 ingredients in saucepan; bring to a boil. Pour over zucchini and onions; let stand 1 hour, stirring occasionally.
In saucepan, bring mixture to a boil, then simmer 3 minutes.
Continue simmering while quickly packing one clean, hot jar at a time. Fill to within 1/2 inch of top making sure vinegar solution covers vegetables. Cap each jar at once.
Process 5 minutes in boiling-water bath
or
AUSSIE ZUCCHINI SLICE
375 grams zucchini, grated (approx. 1 1/2 half large zucchini)
3 rashers bacon, finely chopped (or 1 cup diced ham)
1 large onion, diced
1 cup cheddar cheese, grated
1 cup self-rising flour, sifted
5 - 6 eggs, lightly beaten
1/2 cup vegetable oil
salt and pepper to taste
Place all the ingredients into a large mixing bowl and mix with a wooden spoon until combined. Pour mixture into a well greased lamington tin (16cm x 26cm) and bake in a moderate oven for 30-40 minutes until golden brown on top.
Remove from tin. Cut into slices. Can be served hot or cold.
Serve with salad or fries. Great for when friends are dropping over.

Two easy recipes
One is to slice the zucchini into rounds. Dip in flour and then dip in egg (sounds backwards, but it works). Gently fry in olive oil until golden on both sides (about 4 minutes per side if pan is hot). Drain on paper towels.
Serve with lemon slices.
The second way is also to slice in rounds, but to saute in a pan with 3 pats of butter or margarine, 1 tbs olive oil. Add parsley, salt and pepper. Saute about 8 minutes, drain and serve.

Saute sliced potatoes, zucchini and tomatoes in butter with a little bit of oregeno. Put in a baking dish and sprinkle with cheddar cheese. Bake at 375 for 20 minutes or until all the veggies are tender and the cheese is bubbly and melted.

1.Cut the zucchini, take the skin off, then bread them (dip in butter, then bread crums) and fry them in a fry pan.......
2. Cut the zucchini, leaving the skin on, mix with spiral noodles, other vegetables, and chicken (like a stir-fry) and cook all at once. Then put some Italian dressing on the whole thing.....
Both are delicious!

Yum , fresh zucchini!! Fire up your grill, cut off the ends and slice into 1/2 inch slices and toss in vegetable oil and chopped garilc. Salt and pepper. Grill for 1-2 minutes on each side. Super tasty, fast and healthy. Great with grilled chicken and a nice tomato and red onion salad.
