VIRGIN MOJITOS
Mint Tea
(makes 6 8-ounce servings)
2 tablespoons of Chinese green tea
6 cups of boiling water
1/3 cup sugar
1 bunch fresh spearmint, washed
1. Heat a teapot by pouring a little boiling water in the bottom and swishing it around. Pour out the water.
2. Place the tea leaves in the teapot. Pour about 1 cup boiling water over the leaves and quickly pour off the water.
3. Add the spearmint to the tea leaves in the pot.
4. Bring 6 cups of water to a boil and pour over the tea leaves and spearmint.
5. Add the sugar (more if you like it very sweet), and stir to dissolve. Let steep about 3 to 5 minutes.
6. Serve hot in tall glasses, or let cool in the refrigerator to make iced tea. If you're serving it cold, it's nice to add a fresh spring of mint to each glass.
Piña Colada
Ingredients:
2 ounces coconut milk
1½ ounces crushed pineapple
1 ounce pineapple juice
1/4 cup crushed ice
Brown sugar to taste (no more than one tablespoon)

3 fresh mint sprigs

3 tbsp fresh lime juice
club soda
In a tall thin glass, crush part of the mint with a fork to coat the inside. Add the sugar and lime juice and stir thoroughly. Top with ice. mix. Top off with *chilled* club soda (or seltzer). Add a lime slice and the remaining mint, and serve.
You could make a virgin Martini if you want to make a Martini style drink (since a classic is just vermouth and gin with an olive) If you stretch the concept as many bars do you can serve a Shirley temple in a martini glass with a cherry or a white tea with a lemon peel - sugar the rim and fill with lemonade and a lemon slice or a sprig of mint.
I recommend looking in a cook book for alcohol free drink ideas. Good Luck!

A Virgin Martini contains alcohol. It consists of Silver (clear) Virgin Island Rum and Vermouth in the same proportions as a regular martini.

A virgin mojito would be mint leaves, sugar (or simple syrup), and soda water.
A virgin martini would be an olive in an empty glass.
