As everyone else has said, your kitten should be on kitten food. It has more nutrients in it than adult cat food that enables the kitten to grow properly and with the energy level that kittens have, they need those extra nutrients so that they can't metabolize it so quickly as they can with adult cat food. When a cat becomes full grown and is considered an adult (1 year of age), they do not need all those extra nutrients (their bodies cannot metabolize it quickly so they often end up gaining weight) so you can downgrade them by putting them on adult cat food, which has been formulated to fit their metabolism level.
Although there isn't anything wrong with adding holistic food to the the diet, it is really better for the kitten to be on a food that is formulated especially for them.
They should have their diet composed mainly of dry food. A tip however, it is important to give a serving of canned food once or twice a day in a cat's life, especially if its a male. The canned food has a higher water content and since male cats are prone to crystals and urinary tract problems, the canned food will help your cat keep things flushed out. In general, the wet food will keep the kidneys working.
It is always important to buy the best quality of food you can afford. The better the quality, the healthier your cat will be in its life.
Hope this helps :)

If that cat is not eating cat food already at 11 weeks old, then you need to start giving it to him immediately. That cat is almost old enough to have its own kittens.

The above posts are correct. Until a year, I would stick with a formula for kittens.

Since they're almost a year old, yes, it's okay. Just make sure to give them soft food sometimes because their teeth and gums are still sensitive!
Good lucK!
