I'm starting a new job next week, and am really skint, so have decided to make my own lunch. But I can't face the idea of a boring turkey sandwich!! So, your ideas on sandwiches would be much appreciated.

I'm not vegan/vgitarian. . .and I do quiet like a meat sandwich, however I only like chicken or turkey.

So any interesting ideas on sandwiches. . . and what else would you have in your lunch??

Thanks in advance!!

I make my own Tandoori Chicked which is really easy. The basic marinade is 1 pot low fat yoghurt + 3tablespoons vinegar + 3 tablespoons lemon juice + 3 tablespoons cooking oil and 3 heaped tablespoons of tandoori powder (you can use less- it depends how strong you like the tase. This is enough marinade for 4 chicken breasts. Trim the chicken of all skin & fat and score the lightly. Add chicken to the marinade and leave for a few hours or preferably overnight and then grill until cooked. This freezes well so you can save some for other days. this together with a little salad is scrummy. Enjoy - but when you are really hard up try tesco's own sandwich fillers - they are often on offer 2 for the price of 1 - I highly recommend the Tikka one.

I like chicken and turkey sandwiches, too. But there are ways to make them not so boring. I like to cut my own chicken so that I get a mixture of white and dark meat, so that gives me another layer of flavor already as I have the flavor of whatever spices I used to cook the chicken, the same goes for turkey.

I also like to use my own combination of mustard's to make my own sandwich spreads, using complimentary spices, this makes them very good. I also am not a big fan of iceberg lettuce, so I use sprouts, endive, spinach, for my greens. I pack them separately when I take them for a picnic as they lose their crispness if they are near the dressing for any amount of time. I also like to add tomatoes and cucumbers, remember that the English cucumber doesn't have a lot of seeds and it is the seeds that cause flatulence.

For other ideas, make a salad, you can use anything I put on a sandwich that way. Add a few more veggies and you are good to go.

I always recommend that you keep some peanut butter and jelly on hand for the occasional ppandj. It is a good change of pace.

Hope this helps.

You could do an egg salad one day, which is lots of protein to get you going. You can also do different kinds of cheeses to spice up your turkey & chicken. Try Munster, Brie, Sharp Cheder, Mozzerella, Swiss. You can get most of those pretty cheap at the deli counter if you only order 1/4 lb sliced thin....they go a long way and they give you variety without breaking the bank. And they're much better than what you get in the deli case.

heya,

i noticed that u sed that u where skint so theese aint gonna be made of gold lol! but some cheap, tasty ideas are as followed: Tandori chicken strips with cucumber. or cheese, tomato and branston. or roast chicken/turkey sandwiches with a salad of your liking.Or philadalphia with tomato cucumber and lettuce, tuna, sweetcorn and salad.

Also when i get bored of sandwiches i take wraps. There thin big circles of flat bread wich u put any filling inside nd just roll them up.There really tasty and you can have them hot or cold.If you would like them warm you just grill them for 1min if not just leave them and there still scrumptious! They also have less calories than bread! lol !

Or instead of taking those two you could always take tuna pasta and sweetcorn.Yum Yum yum!!!Or potato salad with onion and mayonaise!

I hope i have helped!!!!!!!!!!!!!

The key to sandwiches is to not stint on the basic ingredients...in my opinion you can't beat a decent thick sliced wholemeal loaf, good mayonaise, quality ham (although since you don't like it, maybe roast chicken), sliced fresh tomato, maybe a bit of some nice tomoto relish and another slice of good bread...making my mouth water just thinking about it...

ALso, you don't have to just take sandwiches...cold pizza, carrot sticks, pasta salad, indian snacks, soup, pretty much anything can make a good lunch.

I love chicken, pesto and mozzarella or cajun chicken salad, or turkey and cranberry, or chicken mayo or chicken and slasa sandwiches mmm

Also instead of sandwiches, make a chicken pasta for your tea and bring the left over for lunch, or a chicken salad.

I have a sweet tooth so I always brin with me go ahead strawberry yoghurt bars or a forest fruit one, I also bring a packet of crisps e.g. wotsits. Maybe a yoghurt.

Avocado, spring onion & chicken sprinkled with paprika.
Fruit (banana or strawberries are best) - add cream cheese & black pepper to strawberries, try peanut butter with banana.
Cream cheese, tomato & cucumber with paprika or black pepper.
Any cheese you like with avocado & tomato (have you worked out I like avocado?!) and a little bit of hot mustard.
How about smoked salmon or tinned salmon - lovely with any mix of salads (and yes - avocado and black pepper!)
LOADS of options - even more if you change the type of bread too - there are some REALLY interesting ones in the shops at the moment!

Try some pasta, with pesto ( bought in a jar) and mix in chicken or turkey, celery, couple of cherry toms, bit of red, green and yellow pepper and anything else that takes your fancy ( raw mushrooms, spring onion, coleslaw) It is Yummy! Yummy! Yummy! It sounds veggie but put loads of meat in. Guarantee you'll love it!
